I feel like I need to address some things that I’ve been getting questions about. In the spirit of transparency, I feel I owe it to you all to explain my thought process and how losing my cooler caused the business to shutter. This is lengthy.
- This sudden closure is not for a lack of success or finances. In a very short time, we built an award winning business that wanted desperately to grow. Unfortunately, in the space I’m in, my growth potential is extremely limited by refrigeration space and also lacks the appropriate equipment to cook to that volume. I am so very proud of what we were able to do with the resources we had and I am eternally grateful to the Mason’s for their generosity and willingness to work with me. A commercial kitchen rental is hard to find and I was incredibly fortunate to have the space I did.
- It is true that I was planning an expansion with a storefront and full kitchen. It was a project that would’ve been built from the ground up in a really cool historic building. The renderings were beautiful and I was very much looking forward to it. However, economically speaking, it did not make sense. My investment would’ve been anywhere from $150k-300k depending. Food prices are only going up. The economy feels incredibly unstable right now and I cannot take on that kind of financial commitment with that much uncertainty. I fear I would price myself out of my demographic almost immediately and be under an enormous amount of debt. I will not put myself or my family in that kind of financial frenzy.
- This has taken a toll on my physical health. This is VERY hard work. Way harder than I anticipated. I started my days on Monday and Tuesday at 2:30 am. On Tuesday, I didn’t get home until 5:30 pm and on my feet the majority of the time. I’ve developed an issue with my neck, left knee, and right elbow. My body hurts. The rest of the days were spent planning, shopping, hauling groceries and supplies into the kitchen, prepping, answering catering inquiries, marketing, ordering supplies, searching for new menu ideas, recipe testing, staying one step ahead of everything all the time, and more; all the standard things that come along with owning a business. I. Am. Exhausted. In the words of my wise, late grandpa, I must’ve been put up cheap.
- I have been working on another business plan to pivot to. I am not planning on launching until Spring once I have everything ready and had healed from surgery. I am not yet revealing what that is but I assure you it’s fun, exciting, and something you’ll definitely want to try! I can’t WAIT to share it with you! The cooler going out was just the catalyst to really throwing those plans into action. I needed it to get me through the end of the year but the universe had other plans for me.

In Edwardsville, check out Entree, LLC. They are under new ownership in the past couple of years and come highly recommended. I’ve never personally met the new owner, but I’m sure she’s wonderful and her food looks delicious!

A lot of you have reached out and have not received a response. As you can imagine, I am very overwhelmed right now. I am taking it one day at a time and as soon as I have the capacity, I will respond.
