Do you like sweet? Do you like spicy? You need to try our Colorado Green Chili - Sweet and Spicy Chicken
Prep time: 20 minutes
Cook time: 15 minutes
Serves: 4–6
Ingredients
1 pound boneless, skinless chicken breasts, (can be served as entire breast or cut into 1/2 inch cubes)
3 tablespoons of your favorite taco seasoning
1–2 tablespoons vegetable oil
1 cup (8 ounces) Colorado Green Chili Salsa (Hot Fire Roasted Tomatoes & Green Chile)
1/2 cup Bonne Maman Peach Preserves )any peach preserves will work but we love Bonne Maman)
Tortilla strips (for garnish)
Shredded cheddar cheese (for garnish)
Hot cooked white rice (for serving)
Directions
1. Place the (cubed) chicken in a large resealable plastic bag, add the taco seasoning, and toss well to coat evenly.
2. Heat the vegetable oil in a skillet over a fry top or burner. Add the seasoned chicken and brown on all sides.
3. In a bowl, combine the Colorado Green Chili Salsa and the peach preserves, then stir the mixture directly into the skillet with the chicken.
4. Bring the mixture to a boil, then reduce the heat, cover, and simmer for 2 to 3 minutes, or until the chicken is cooked through and the meat juices run clear.
5. To Serve: Spoon the sweet and spicy chicken over a bed of hot cooked white rice, and sprinkle with tortilla strips and shredded cheddar cheese. Additional topping ideas: diced avocado, sliced black olives or black beans
