Fresh Green Salsa

This is a Salsa made with fresh ingredients and must be kept in a refrigerator. It will congeal and this is normal, just shake it up or stir it and you are good to go. The salsa will last about 2 weeks in your fridge, sometimes a bit longer, but that is
a decision you must make. When you thaw it, sometimes it may have water/tomato liquid at the bottom of the bottle. If so you m

ay put it in a pan and heat it to cook some of the liquid off. The salsa can be eaten cold or warm. Is is a perfect side for chips, or on top of eggs, tacos, meats, fish. If you have enough you may sear/cook some chopped pork in a pan and add the salsa towards the end. This is a Sauce made with fresh ingredients and must be kept in a refrigerator. You may freeze it and thaw for use at a later date if needed. It will last approximately 2 weeks in the fridge. It is a perfect sauce to make enchiladas at home, or cook with any type of meat you like. One of my favorite things is to have it in the fridge for a long day at work and come home and not feeling like cooking, I normally purchase a rotisserie chicken, strip it and keep it on hand. All you need to do it heat the tortillas put sauce on both sides of the tortilla, fill with chicken, etc, roll on the plate and do as many as you like for dinner, top with Queso Fresco and extra sauce if you want. You may also heat all items partially, make the enchiladas and place them on a cookie sheet and heat in the over for about 15 min (to avoid making the tortillas soggy), serve on plate and enjoy…

If you want to do it easier way, heat the chicken and sauce on a place and tortillas on the side and serve with rice if you like.

The current batch of Salsa was a great hit at the booth yesterday, there are a few pints and quarts left of you like your salsa medium get while you can.
