This upcoming Monday and Tuesday at the wobbly olive downtown location we will be hosting a dinner! Latin and Asian fusion, this is something you won’t want to miss. A menu that has had a lot of thought and practice put into.
Two chef’s who helped inspire this menu Mark Henry, Fernando Trancoso for having some of the biggest impact on my career in this industry helped me fall in love with two cuisines, to the point of wanting to marry the two and execute to a higher standard. A huge shoutout to Matt Isakson from the wobbly olive for Writing and helping with the cocktail menu. I would also like to give a huge shout out to Sean Fitzgerald for helping with the cocktail menu and pointing us in the right direction. Thank you all!

BIG NEWS! A New Flavor is Coming to Downtown!
We are starting the New Year with a brand-new experience! This January, we are taking over the kitchen and dining room at The Wobbly Olive Colorado Springs (Downtown) for a special 3-day pop-up event!
We’ve been working on a new menu that is a little different from what you’re used to seeing from us—think fresh flavors, new energy, and the same passion you love.

Come join us, grab a seat, and be the first to taste what we’ve been cooking up. Once the food is gone, it’s gone—so get there early!
We can't wait to see you all downtown!

Been working our baking! This is our first round of baguettes one of Chad Henry’s favorites. In the future we look forward to bringing some of these ingredients to you for a special menu.
Keep an eye out for our next menu, as we are working hard to get it out to you! Make sure you come hungry!

Thank you to everyone who came out last night to Cocktails AFTER DUSK to support them as well as our team! It was incredible to be there and we had a great time. We were so close to selling out last night, that was such a relief to have put the amount of time and effort that went into these dishes. Thank you to everyone hosting the event that made this possible, and absolutely thank you everyone that came out to support us. We will see you soon!

October 13th we will be doing a small menu for a cocktail competition at cocktails after dusk! Some see us enjoy the competition, and order some small bites or a bowl of ramen if you so decide! We would love to see you all there supporting local small businesses!
Thank you to both cocktails after dusk for thinking of us, and a huge shout out to Moss Wood Mushrooms for the supply of ingredients!

We successfully hosted our inaugural dinner on the 14th, and we extend our gratitude to everyone who participated. With our first dinner accomplished, we are now conceptualizing and organizing our second event. We look forward to seeing you all again soon!

Thank you to all who came out and supported locally! It was a blast having our first dinner with everyone who showed and hosting with Cocktails AFTER DUSK. We will be working hard to give you an even better experience next time!
