Need to give this a try. It would be nice to bake both loaves at the same time

I had to try baking my sourdough batards in glass and metal pans instead of my usual Dutch oven… and honestly, I was surprised by how well they turned out.
Same normal sourdough bread, just shaped into a batard and cold fermented for 24 hours. Each loaf was about 852g.
I preheated the convection oven to 475°F for 35 minutes, then dropped it to 450°F. I put the dough into room-temperature pans, spritzed the “lids” with water, and baked with the lids on for 25 minutes. Then I removed the lids and baked another 12–15 minutes, until they were browned the way I wanted.
And look at these! 😍
I really didn’t notice any appreciable difference between the glass and metal pans. They baked beautifully, and honestly, this is so much easier than using a Dutch oven — especially if you want to bake more than one loaf at a time.
My family actually prefers this shape too. The slices are more uniform and it’s so much easier for sandwiches.
