Egg & Chicken Street Corn Pasta Salad
Serves 6
Ingredients:
• 8 oz elbow pasta
• 2 cups corn (defrosted if frozen)
• Oil spray
• Pinch sea salt + pepper
• 1 red bell pepper, diced
• 1 green onion, sliced
• 1/4 cup cilantro, chopped
• 4 oz cotija cheese
• 8 oz cooked chicken, chopped
• 6 hard boiled eggs, chopped
Dressing:
• 1/4 cup mayo
• 1/4 cup plain yogurt
• 3 tbsp lime juice
• 1/4 tsp chili powder
Directions:
Cook pasta according to package directions and let cool. Toast corn in a skillet over medium heat with oil spray, salt, and pepper until lightly charred. Whisk together mayo, yogurt, lime juice, and chili powder. In a large bowl combine corn, bell pepper, green onion, cilantro, and cotija. Toss to coat. Stir in pasta, chicken, and chopped eggs. Chill before serving and enjoy!
