Turn a few simple ingredients into the ultimate breakfast 🙌

These Smashed Potato Egg Cups are crispy, cheesy, protein-packed, and made with our Organic Pasture Raised Eggs for the perfect grab-and-go breakfast!

Meal prep these once and thank yourself all week.

Ingredients:
🥚 1/2 cup shredded sharp cheddar or mozzarella
🥚 6 small yellow potatoes, boiled until fork tender
🥚 1 tbsp melted butter
🥚 6 Organic Pasture Raised Eggs
🥚 Salt and black pepper

Directions:
Preheat oven to 400°F and grease a 6-cup muffin tin. Add a little cheese to each muffin cup. Place one boiled potato in each cup and smash into a cup shape, pressing up the sides. Brush with butter and season with salt + pepper. Crack one egg into each potato cup and season again. Bake 15–18 minutes until egg whites are set. Let cool 5 minutes before removing.

Finish with hot sauce, hot honey, or chili oil 🤌

Here’s how to make them:

This Street Corn Pasta Salad is creamy, crunchy, packed with flavor, and hearty enough to actually keep you full! Made with toasted corn, fresh veggies, diced chicken, and Chino Valley Ranchers hard boiled eggs for the ultimate protein-packed summer side.

Egg & Chicken Street Corn Pasta Salad

Serves 6

Ingredients:
• 8 oz elbow pasta
• 2 cups corn (defrosted if frozen)
• Oil spray
• Pinch sea salt + pepper
• 1 red bell pepper, diced
• 1 green onion, sliced
• 1/4 cup cilantro, chopped
• 4 oz cotija cheese
• 8 oz cooked chicken, chopped
• 6 hard boiled eggs, chopped

Dressing:
• 1/4 cup mayo
• 1/4 cup plain yogurt
• 3 tbsp lime juice
• 1/4 tsp chili powder

Directions:
Cook pasta according to package directions and let cool. Toast corn in a skillet over medium heat with oil spray, salt, and pepper until lightly charred. Whisk together mayo, yogurt, lime juice, and chili powder. In a large bowl combine corn, bell pepper, green onion, cilantro, and cotija. Toss to coat. Stir in pasta, chicken, and chopped eggs. Chill before serving and enjoy!
