Introducing the newest Project car! This is my mildest (heat wise) sauce to date. But what it lacks in heat it makes up for in depth of flavor. This sauce blends fermented Tomatillos, jalapeños, Serranos, garlic, Cilantro, and Lime. It was a strong ferment bringing. A bit of funk to its citrus kick. Only 5 available to public, but I’ll start another batch soon. 5🌶

Pineapple and habanero.
This classic combination bring an intense pineapple flavor and aroma without any of the added sweetness. It goes really well with fish, chicken, pork, stir fry, and numerous other things. This one’s really gotten rave reviews from everyone who’s given me feedback so far.

Drop Top,
Mango, Lemon drop peppers and Ghost peppers.
This sauce again goes really well with fish chicken and pork. The Mango is noticeable, but really takes a back seat to the citrus notes in the ghost and lemon drop peppers.

This is a spiced vinegar, a traditional Filipino condiment, I have used on any dish with a savory protein or even on salads. It does not carry a lot of heat from the peppers, but does bring a lot of flavor and acidity to any dish.
Vinegar, Serrano, Orange bell, jalapeños, habanero, Thai chili, Thai Ginger, onion, garlic.
