Custards, creams, mousses, and soufflés continues to be my favorite module every semester. We did some of the same desserts I do with every class but changed a couple things this summer. We added a passion fruit curd to the bottom of our mascarpone panna cotta and we tried out 4 different flavored crème brûlée. Spiced, coffee, chocolate, and classic. We are halfway through the summer semester now, it is going quick!

Last day of instruction for my baking and pastry students! My afternoon class worked on some individual cake projects and it was so fun to help them create their own flavor and design. Each cake was unique, just like them! The best part, is that most of this class is made up of culinary students, not baking! They have really taken a genuine interest in the pastry side and in improving their skills- I couldn’t be more proud of them all! Next up, practical exams!

Tarts week for my baking and pastry students! We made apple almond, chocolate caramel with peanuts and sea salt, lemon with strawberry meringue, and what we called the “Elvis”, which consisted of banana financier, peanut butter and chocolate feuilletine crunch, and a whipped white chocolate mascarpone ganache!

Our final day of celebration cakes ended with a little two tiered project. Students were tasked with creating a marbled geode style cake. We had a great time being creative, getting a little silly, and Smash Mouth was stuck in everybody’s head… thanks Julie!! 🤣😜 I’m going to miss this class… only one more month to go.

Take a look at some of the beautiful desserts we made in class this week to end our custards, mousses, and creams module! My Baking and Pastries class made chocolate mousse bombes, raspberry religeiuse, and Paris Brest ( unfortunately not pictured). Individual desserts are so fun!
