Four new beers on draft and in cans this Friday!

Time Tomb - 8.4% West Coast DIPA with Mosaic Cryo, Citra Cryo, and Columbus Cryo! A classic "old school" DIPA with 140 IBUs and some of the dankest hops we could get our hands on!

Aurora of Light - 5.6% HAZY Pale Ale with Freestyle Hops Motueka! It's one of the most haze positive hop varieties (not to mention aroma positive with it's notes of fresh-cut herbs and muddled lime).

Pilsner Kopírovat - 5.4% Czech Pilsner! Brewed with only the finest Floor-malted Bohemian Pilsner Malt, our hand-selected Czech Saaz Hops, lager yeast, and reverse-osmosis water... can't exactly import 1200 gallons of water from Pilsen!

Culinary Diplomacy - 6.2% "Thai Green Curry" IPA with coconut, serrano peppers, Thai basil, lime, and galangal. It's weird (and surprisingly delicious)! Originally a COVID-era variant created by our buddy Rob!

Our annual celebration of Kölsch starts at 11 AM today and runs through closing Sunday! We have fresh draft of Könventional ($4/10.5 oz pours) plus Early Frost (Dusseldorf-style Alt), Albura Taqueria will be serving German-inspired tacos (schnitzel, currywurst, and sauerbraten), and MD Polka Band will play at 3 PM!

Three new beers on tap and to-go today, two pink and one yellow!

State Fair Pink Lemonade - 5.0% Lemon-Raspberry Sour Beer. Like our standard State Fair Lemonade, but with the addition of Raspberry Juice concentrate for color and a light-bright berry flavor!

Reality is Frequently Inaccurate (2026) - 5.7% wine-barrel-aged sour beer aged on Spanish Cedar spirals, fresh grapefruit zest, and hibiscus flowers. Named after a line from The Hitchhiker's Guide to the Galaxy - the goal is to create a beer that looks and tastes like ruby red grapefruit juice. This is the third batch, and the first since 2022!

Könventional - 5.1% Kölsch brewed with German malts (Pilsner, Vienna, and Carafoam), German Hops (Hallertau Mittelfrüh), German Ale yeast, and our Lake Liberty water! It has a similar balance to a Helles lager, but with more fruitiness and a softer finish. Saturday and Sunday are Cologne-bia Kölsch Day 2026 with traditional service, German food specials, and MD Polka Band (8/29 @ 3 PM)!

Homemade hop extract, an obscure historic yeast strain, and a weird grain bill... today's small-batch Backwards History:1950 has everything a beer geek could want! Based on the recipe for Ballantine IPA, which was brewed with an evolving recipe for about 100 years (1890s-1990s).

This version included ~20% flaked corn in the mash, along with American barley and a little caramel malt for color. The original yeast strain BRY-96 is the "godmother" to the clean American Ale yeast usually called Chico (for it's association with Sierra Nevada). It took this batch up to 8.5% ABV (a little higher than the 7.5% original). Kettle hops were Cluster and Goldings for 73 IBUs. After extended aging Mike dosed in a small amount of fresh Bullion hop oil steam-distilled by his buddy Matt from Patent Brewing Company!

The result is honestly more reminiscent of something like Stone's Arrogant Bastard than anything else - firm bitterness, pleasant maltiness, with some herbal-citrus from the hops.

Draft-only starting today, new Backwards History: 1950. A historic American IPA brewed with corn and American barley, fermented with the original Ballantine ale strain (BRY 96) from The Brewing Science Institute! 73 IBUs of Cluster and East Kent Goldings, then finished with a small dose of Bullion hop oil steam-distilled by Matt at Patent Brewing Company!

Tickets for our next beer dinner are available now: September 23rd at 6:30 PM! Chef Brock of Albura Taqueria is using the Sirloin Tips from the whole cow we recently purchased and making a variety of autumn-themed dishes! For the drinks, the theme is Cocktail Beers vs. Beer Cocktails. Our GM Spencer is using beer as a component in unique cocktail creations, while co-Founder Mike is making cocktails inspired by the flavors and balance of his favorite beer styles!

The fresh batch of IPA is Exaggerated Truth - an extra-juicy super-tropical Hazy IPA with Cashmere and Citra! If you're in a lagery mood we've got Sky Meadow (Festbier), Prophecy of the Clock (Czech Dark Lager), and the definitely not Reinheitsgebot-approved Leaf Fall Up (Pumpkin-Spiced Lager with fresh coffee, vanilla beans, cinnamon sticks, nutmeg, ginger, and allspice)!

Cologne-bia Kölsch Day 2026 is this weekend! To celebrate the release of Könventional, we'll have traditional Cologne-style service on Saturday and Sunday! Bartenders will be walking around with 10.5 oz pours of Kölsch for $4 each, replacing your empties until you flip over your coaster. MD Polka Band will be playing mid-afternoon on Saturday. Plus Albura Taqueria will start up a month of German food specials featuring currywurst and schnitzel/sauerkraut tacos!

Friday is the draft/can release, alongside State Fair Pink Lemonade, and bottles/draft of Reality is Frequently Inaccurate 2026 (Barrel-aged Wild Ale with Spanish Cedar, Grapefruit Zest, and Hibiscus)! Plus will have a draft-only altbier!
