My Latest Creation
Rainier Cherry Salsa for Pork Chops
This is what you will need for 3-4 people:
3-4 pork chops
1 pound fresh Rainier Cherries
3-4 shallots
2 tablespoons champagne vinegar **
1 tablespoon grapeseed oil
Parsley for garnish
Salt and pepper to taste
** for a sweeter salsa use Raspberry Vinegar.
Here is what you do:
Wash, pit and slice the cherries.
Peel and slice the shallots, cutting out any yellow or green pieces in the shallot.
Combine the cherries, shallots, vinegar, and olive oil in a blow and gently mix well.
Add a bit of salt and pepper if desired.
Lightly cover and chill in the fridge for 2-3 hours.
Fry, grill, or broil your chops. I fried mine in some EVOO with just some salt and pepper.
Chop the parsley.
Place chops on a plate and spoon some of the salsa on top. Garnish with some parsley.
Voilà, Instant gourmet!!!!!!!!!
