This is my dad and me circa 1980. It’s nestled on a board attached to my work desk and is surrounded by pictures of my wife, our two boys, my immediate family, my wife’s family, and numerous Florentine mementos. I look at this board every day and reflect. Without the values Florentine ingrained in me, I honestly believe I wouldn’t have the wonderful life I have today. I’m eternally grateful for this. 

I know these words are long past due, but I had to take a step back and absorb everything to gain clarity. As much as I have loved recreating a small piece of Florentine Restaurant and continuing on the story of my family, it’s time to permanently close our ghost kitchen. I love it, I do, but sadly this love doesn’t generate sustainability. 

Recreating nostalgia isn’t easy, especially when it comes with a shadow much larger than the person trying to foster it, so please know I am humbled by your support. Your enthusiasm enabled me to continue the legacy these past seven years. Over that time, I’ve loved listening to you express what the Florentine has meant to you. It’s always been more than just the food, it’s about the history tethered to each meal, which is why it’s been incredibly hard to publish this post. 

For the time being, you can still find our pasta sauces at grocery stores, MarketWagon.com, and at Farmers Markets for the next several weeks (Worthington, Westerville).
