Specialty gourmet potatoes,grass-fed beef and lamb, and pastured pork. Our cows and lambs are grass-fed and grass-finished. Biodiversity is our goal.

Olsen Farms is a small family farm located near Colville, WA in a valley of the beautiful Selkirk Mountains in Northeastern Washington. We grow twenty-three varieties of potatoes that are dryland produced and have superior flavors, textures, and colors. We specialize in hand sorting and packing each order to the customer’s desired size and variety specifications. Olsen Farms offers naturally and s

ustainably raised beef, pork and lamb throughout the year. The cows are raised on lush green grass pastures in the summer and hay cut from the pasture in the winter. We feed the cows only what we grow on the farm - no outside food sources or animal by-products. Our lambs are moved throughout the farm to remain on pasture year-round. Our pigs are fed barley grown just across the road from where they live. Olsen Farms is committed to enhancing the rural economy and stewarding farmland for wildlife habitat. Sustainability and direct marketing are the roots of our family farm. Common companions at our farm include deer, elk, moose, bald and golden eagles, bear, and lots and lots of wild turkeys. Before and After 🥔 what our good friend, Chef Rachel at calls "little smashies!"
Boiled whole in salt water, cooled, smashed, roasted at 420° for .. a while or until browned and crispy 😋

1 large potato
1 bell pepper
1 onion
Any other veg in your fridge

Cube all your veg
Blanch cook the potato in salt water until tender (5-8 minutes)
Combine with raw veg and season (we like a Cajun blend and a good pinch of salt)
Separately beat 6 eggs, pinch salt, and fresh herbs

Coat the muffin tins with butter or cooking oil
Fill each tin 3/4 full
Pour egg mixture over top

Bake at 375° for 10-15 minutes or until cake tester comes out clean
Broil for 3 minutes if more color desired
Enjoy!
