For the first time in Texas History, Dove Season opened on September 1st in all 3 zones across the state!

With Dove Season underway, we wanted to recommend some resources to make the most of this historic moment in our hunting heritage.

Check out Texas Dove Hunters Association for all things Dove and share images with your success with fellow outdoorspeople.

Dove Poppers are a classic and undeniably delicious way to enjoy the hunt. But for our curious Foodies, check out Chef Holly Hearn Chef Holly Hearn’s cookbook entirely on dove and be inspired! Or get enough doves together and let us make you our delicious Tuscan Dove Sausage!

While we look to the skies, we are also laying the groundwork for a great Whitetail season! Archery 🏹 starts in a few weeks, but we our loading dock is open year around.

For our next Vendor Spotlight Special, we want to introduce you to Tío Pelon and his line of handcrafted Salsas/Sauces.

Locally made in San Antonio, Tío Pelon’s Salsita, Inc went from a small kitchen and a big dream to a large production facility that never forgets its Norteño roots and the hands that created the first jars.

Every Tuesday in September from 11am-3pm we will be featuring our “Working Hands” lunch special for $6.99:

*a potato bun loaded with our Smoked Pulled Pork doused and tossed in Tío Pelon’s Salsita, Inc ‘s Birria Sauce
*pickle spear, chips and fountain iced tea included

Come and Enjoy your lunch in our provisions room!

Aoudad Backstrap Bresaola

Bresaola is an Italian cured and air-dried meat. Traditionally made from the eye of round from beef, we take it one step over and make it from your Wild Game.

It’s a great option for your Backstrap(s) and/or Tenderloins if your tastebuds are looking for a something different and delicious.

While the flavor profile honors the Italian culinary roots of crushed juniper berries and nutmeg, we add a night of our cold smoke and a coating of crushed black pepper to the mix. It’s a process that results in delicate paper thin slices ready for your charcuterie board or daily meat treat!

When it comes to choosing whether not to add fat to your Ground Venison, think about how you buy ground beef in the store.

Are you a 93/7, a 90/10, an 80/20 or even 75/25? The first number is the amount of Lean (red meat) ratio to fat (the second number).

Venison being naturally lean, does require fat introduced at some point in the process. Whether you have fat added during the grind or during the cook, that’s up to you.

Our job is to ensure you are set up for success, whichever decision you make. When you order no fat added, we take extra care to trim away anything that requires a longer cook time. Since plain venison will cook faster, we want to ensure every bite delivers well.

With that same care, we chose premium fats to offer those who would be so inclined. From pork shoulder to prime brisket to our ribeye steak ends, we understand that fat gives you a lot of versatility and we are here to set you up for culinary success.
