HASHBROWN EGG CUPS
✨ Tater tots or hash browns
✨ 8-10 eggs
✨ 1 cup chopped veggies (diced peppers, spinach, onion, mushrooms)
✨ Protein of choice (turkey, bacon, ham, sausage)
✨ Salt and pepper to taste
✨ Grated cheese to top
Preheat the oven to 400 F. Place 3 tots in each slot and bake for 10 minutes. Remove and smash flat. Add veggies and protein of choice on top of smashed tots, then blend eggs and seasonings together and pour over the top. Top with cheese and bake at 350 F for 20 minutes.
SAUSAGE, GNOCCHI, VEGGIE SHEET PAN DINNER
✨2 bell peppers
✨1 zucchini or squash
✨1 cup cherry tomatoes
✨1 red onion
✨4 chicken sausages
✨1 bag gnocchi
✨1 tsp salt
✨1 tsp garlic powder
✨1/4 cup grated Parmesan cheese
✨1 tbsp ranch seasoning
✨Drizzle of avocado oil
Chop the peppers, zucchini, onion and sausage, then dump them and the cherry tomatoes onto a sheet pan. Drizzle with avocado oil, then add seasonings and Parmesan cheese. Bake at 400 F for 30 minutes. Serve over rice or quinoa.
SNICKERS CRUNCH CUPS
✨4 plain rice cakes
✨1/2 cup natural peanut butter
✨1/4 cup honey or maple syrup
✨1/4 cup coconut oil, melted
✨1/2 tsp vanilla
✨1/2 tsp salt
✨1/3 cups veggies dry-roasted peanuts, chopped (optional)
✨1/2 cup dark chocolate chips, melted
In a bowl, crumble the rice cakes, then add all other ingredients except the chocolate. Once combined, press the mixture into the bottom half of a muffin pan, then drizzle the melted chocolate on top. Place in the fridge or freezer for 30 minutes until set.
