I have been experimenting with sprouting apple seeds to diversify the Farm’s tree species and help feed the livestock and poultry. The apple species is diverse and unpredictable. Apples are not true to seed, so a Gala (or any apple variety) can produce anything from a spitter to a crabapple to an edible apple depending on what the pollinators crossed it with. I have heard there are 50k different apple varieties, sounds like a fun adventure!!

Did a little harvesting today, got an ear of strawberry popping corn. Some yummy tender radishes and some (frosted) pumpkins that went to the animals.

I’m saving seed from the strawberry popping corn to try again next season to see if it grows better next time.

The goats had a pumpkin carving session today, they were quick to get working! Eclair started off, she likes the cyclops look. Artemis joined her by gutting some seeds. MoonPie helped with the carving. Little Girl came over to inspect the progress, i think she approved.

We’re having a cold rainy day. I decided Pumpkin Spiced Muffins sounded lovely for breakfast so I whipped some up and tossed them in the oven. I typically don’t like Pumpkin Spice but these were amazing!

Recipe makes 12 muffins in a standard pan

Pre-heat oven to 375°

1c - 1-to-1 gluten free flour
1c almond flour
3/4 c sugar
1/2 c brown sugar
1tsp baking soda
1/2 tsp salt
2tsp cinnamon
1/4 ground clove
1/4 nutmeg
1/4 cardamom
1/4 ginger
2 farm fresh eggs
1 (15oz) can organic pumpkin puree
1/2 cup oil - I used olive oil
1tsp vanilla extract

Mix dry ingredients, then add wet ingredients.
Bake for 25-30 mins. Mine was done around 30 mins but I’m at 8500’ elevation. Check doneness with a toothpick, if it comes out clean they are done. Soo soft and fluffy! I ate 2 hot out of the oven. 😋 Make them and eat them!
