Dolgo Crab enjoying 2 weeks of 100 degree sunshine in hot Eastern Washington to generate all that brix! Dolgo packs an acidic punch, with a pH under 3, and has some tannins. Amazing for blending, but we’ve done a straight Dolgo single varietal in our cider barn. It will melt your teeth the first 8-12mths since it is so tart, but after a year in the fridge, it was quite nice if you like dry sharp cider. We’ll leave the Dolgo SV to the daring cidermaker and stick with blending in our small batch ciders. Look for details on bottles, buckets, barrels, and IBC toes of frozen raw Dolgo juice next month. Dolgo is our earliest cider apple with potential August harvest.
