Principia Discordia: Elderberry Braggot

The Deets: Small Batch Limited Release. This came out well beyond our imaginations, and putting this into the wild will be a trip! No lotto this time. This is really something special!

Join us this Saturday at Thistle Draftshop for this special release at 6pm. First come, first serve. NO HOLDS. We are selling a one of kind black Ticonderoga # 2 pencil with gold foil insignia of our brands.

Food Pairings: Smoked Alabama White Chicken, London Broil, Tempura Coddlefish, Ash Ripened Goat Cheese, or Balsamic Glazed Lamb Shank with a side of Creamy Butternut Squash Soup sprinkled with Cinnamon.

***!!!!!BREAKING NEWS!!!!*** Patience Brewing and teamed up to produce a magic potion that will enlighten and inspire those who dare to indulge. This collaboration, years in the making and carefully constructed, has finally arrived. Principia Discordia is a 70/30 blend of Christmas Berry Blossom honey Mead and 2022 HBC 1019 c.v. hopped Saison, fermented separately, and then combined to co-ferment with a heavy dose of Elderberry. The result is a well-balanced braggot, with notes of plum, raw, bright honey, and a lightly tart finish of Elderberry that ends with an aromatic lupulin note. Every flavor is well articulated, and we are happy to have achieved well beyond our expectations. Choronzon - 12%abv
Mead made with Lemon Blossom Honey, Black Currants, Ecuadorian Vanilla Beans & Cinnamon

This mead has a slightly tart earthiness thanks to the Black Currants as well as hints of cinnamon. The vanilla sits on the back of the palate, rounding everything out.

I Wonder If It Remembers Me
14%abv

A Pyment made with Coffee Blossom Honey and Phantasm Powder from .nz in New Zealand.

Phantasm is essentially powdered Sauvignon Blanc skins. This addition gives this mead gorgeous notes of peach, green apple, guava, and citrus. The coffee blossom honey adds even more vibrant citrus notes as well as some rich florals. This Mead won a gold medal at Texas Mead Fest this year, and I couldn't be more proud of this offering.

Cycling Trivialities - 7.9%abv
This is the first in a series involving a single honey and a single tea.

Cycling Trivialities B1 is a Session Mead made with beautiful Macadamia Blossom Honey provided by , then conditioned with a blend of 8yr and 35yr Pu'er Tea Oranges. Rich floral honey combined with the earthy tannin provided by the tea makes this expression truly unique. Simple, yet deep and complex.

Empty, & Become Wind - 14.5% abv
Mead made with Ulei Blossom Honey from conditioned on Gin Soaked French Oak and Ecuadorian Vanilla Beans.

Nose - Notes of pine, honey, and to***co.
Palate - Starts with butterscotch, then quickly transitions to juniper and to***co. Finishing with sweet vanilla.

La Lechuza - 17.2%abv
First, we took so tasty local Wildflower Honey, then we smoked it using white oak from a tree located less than 5 miles from us. After fermentation, we added some Reposado Tequila soaked French Oak and Carolina Reapers grown in the garden. This one is quite interesting and definitely worth building upon. Notes of BBQ and Honey on the nose. The palate is a nice mixture of aged tequila flavors paired with tangy smoke as well as a healthy dose of heat without being overwhelming.

A few updates

Smoked mead with Tequila soaked oak: smells like BBQ, tastes like mezcal aged with honey. Hot pepper will be added close to It being ready.

Ulei Blossom mead with Equadorian vanilla and gin soaked French oak: coming along nicely. Oak and gin on the nose, vanilla and butterscotch honey on the palate.

Phantasm 2.0: citrus notes from the coffee blossom honey pair well with the green apple/white peach notes the Phantasm provides. Yeast added a slight guava note that is also nice.

Blueberry Lemonade Hydromel: Used Lychee Blossom/Rambutan Blossom Honey. Finishing Primary, and hopefully will be ready in the next month.

Macadamia Blossom Honey in route... don't know what I want to do yet.
