... I'm headed back to Culinary school.. In chats w a few to see what programs will best suit my needs.. The Art Institute gave me a great base, and had some of the best instructors i could have asked for.. minus one or 2... but time to get my knowledge up.. and will be releasing content on that journey..

I've been in a planning stage these past few months while licking my wounds, but I'm healed up and ready to get to work.. failure only happens when you give up.

Again thank you to all those who supported me when the truck was open and look forward to sharing my continued educational journey and what will come after.

Little homemade pizza action for my Wife

1. Ugly Sweet Meat and Cheese: Gound beef/beef talo/ garlic herb crust/Mozzarella/ hot honey

2. Ugly Burger pizza: ground beef/beef talo/ Mozzarella/sliced onions/ garlic herb crust

I know it's been awhile. I'm still learning a few things/ and making plans so I can start rolling out some content on a regular basis... but here is what was for dinner last night

My wife wanted Gnocchi for dinner... and she really likes Korean rice cakes.. so I made a Tteokbokki-Style Gnocchi

Some people like to seer their Gnocchi in EVOO but I like to make mine in brown butter..

The sauce is made w veg broth, coconut aminos (soy sauce replacement) sesame oil, cornstarch, cane suga, and gochujang

Garnish is sesame seeds and mine w green Onion.

This dish is NOT halal.. the alcohol content in the gochujang I used is .01% over the allowed limit to be considered. I do however have a recipe for halal spicy chili paste that I will make so those that love spicy Asian dishes can still make it.

Today I made a healthy quick breakfast... I had my fire on to high so we got some browning on the egg and i used a plate that was to small... but that's OK, I was mad hungry and sweaty from my workout. It was time to eat and shower so I could get back to my trophy house husband duties.

Bacon and spinach omelet

3 whole eggs beaten
1 cup spinach
2 rough chopped beef bacon
1 slice Swiss cheese

Eat good/ feel good.. the food you eat is the fuel for your day!

I mean.... who doesn't love pasta??? Am I right?

Top left is a black pepper beef bacon Alfredo w shredded Parm (Alfredo made the traditional way)

Top right is a basic spaghetti w meat balls w shredded parm

Bottom 2 are a tomato basil spaghetti.

It is with a heavy heart that with recent developments, due to circumstances beyond my control, and the responsibility I have to my family and business partner, Today will be our last day Open.... but don't you worry.. this is just a set back that's preparing us for the come back! This isn't goodbye, just see you later. I am not leaving the food industry and will eventually open something again.. but the financial strain of 20months without making enough to be able to draw any pay to help support my family has become to heavy..

We will be open from 12pm-830pm or until sold out.

We have enough for 40 burgers.. and 20 cheesesteaks.

This is really hard for me to do, but I have to do what's best for my family..

Thank you all for the love and support. This page will turn into a proper food blog introducing ppl to places to eat and video recipes for you to follow.
