Chicken Pumpkin Roast 💕
Well this was fun!!! I have been seeing this recipe all over social media. It’s so simple! I cleaned the seeds out of the pumpkin, stuffed it with a whole chicken, potatoes, onion, carrots and savory herbs. I added some brown sugar to caramelize the flavor.

It didn’t look too appetizing when we first took the top off, but was wonderful after we mixed it up!
I bet tomorrow’s leftovers are even better! 😭

Wow! What an amazing day. The kids LOVED exploring the springs kayak park! We bought floaters on clearance at Walmart, with HOURS of entertainment!
