Butcher’s Son is a modern take on the classic butcher shop that has become nearly extinct. Our goal is to provide the Corning area with locally sourced meats of the highest quality with care, while building connections between local farmers and our customers.

Owner Cameron Matthews is a second generation butcher that spent most his life at well known family butcher shop Kings Market in Savona NY. With the addition of years of culinary experience with 8 years as a caterer, Cameron attended ICE culinary institute in Manhattan and received an International Culinary with honors. After which he spent time honing his skills in 6 different Michelin starred restaurants in NYC. He brings his passion for culinary and the world of sustainable butchery together Butcher’s Son a butcher shop in Corning that will change the way we look at food.

Butcher's Son takes pride in supplying our customers with 100% locally sourced meats from our farm partners all in the Corning area. Our goal is to provide stewardship to the animal as we implement culinary techniques to utilize virtually the entire animal. We don't receive our meats in boxes or bags like the massive supermarket chains, nothing is pre cut in a factory in china, Everything we do is local. Our meat comes in large primals, halves, or even whole carcasses, all from local farms. We offer custom cut meats of the very best quality and lineage with the primary goal being sustainability.

picked up a ribeye and brats link this morning for our first grill of the season. so delicious!!
Wonderful shop and a much needed merchant in Corning NY. I used them last fall when they opened for a couple T-bone steaks. Prices were competitive but a little high end BUT, the cuts of meat were very grade A++. I was very highly pleased when we grilled the steaks last year so i pushed and wanted to only use them for a brisket to slow roast on a new smoker i bought this year. Cant wait to taste it. A 7lb brisket was just under $60 bucks but its enough to feed a whole block lol. I don't mind paying the little extra for the high end cuts of meat, but with this butcher it is very much worth it. They do have burger specials for lunch. Although i have not tried them i am very much considering and welcome to try them in the coming weeks. Their homemade jerky is to die for mmmm. Lol Whether its for sausage, beef, or pork this place has the best to offer in the Crystal City. Any person in their right mind would be a fool (joking lol) not to try them out for any butcher needs. Ive been assured that meat bundles are coming if not available already. So for your cookout, grad party, or picnic needs feel free to stop in and see what they have to offer. Again you will be very PLEASED!!!! I have no affiliation with them at all and this is a true hearted post original customer experience. Feel free to check them out and make your own decision but im almost certain you will return again and again for all of your butcher needs as I will always. LOL

During, resting, and ready to eat! Highly recommend Ribeye from here!
I don’t think I have had one bad thing here. So frickin good! Pittsburgh salad, from this Pittsburgh transplant, on point.
It was a three meat weekend from the Butcher’s Son for America’s birthday! First cook was some delicous burgers with their ground beef - so good! 2nd cook was some of the homemade kielbasa cut up into a low country boil of Corn, Clams, Shrimp, Taters, Andouille sausage and kielbasa with plenty of lemons and Old Bay. 3rd cook was the Meat Lover’s Nirvana of their gorgeous Tomahawk Ribeye! The color and marbling on this steak was beautiful and after coating it with Kosher salt, Coarse Ground Pepper and some Billy Bone’s Beef Rub I slow cooked it on the Big Green Egg for about an hour at 200 degrees. Pulled it at 130 and rested it while I brought the egg up to 650 degrees for a 2 minute sear on both sides. After resting it for 10 minutes with some garlic butter, I served this beast up with grilled corn, and salt potatoes. DELICIOUS!So in closing, if you want a no brainer on the protein end of your holiday meals, I highly recommend ANYTHING from Cameron and crew at The Butcher's Son Corning!
