What a weekend for the Texas Chefs Association – Coastal Bend Chapter! 🤘🏽👨🏽‍🍳🏆

As we wrap up the 2026 Texas Chefs Association Convention, we couldn’t be prouder of the chefs, students, educators, partners, and supporters representing the Coastal Bend. This weekend was about education, fellowship, professional growth, and—most importantly—celebrating the people who continue to strengthen our culinary community.

🏆 Chapter Educator of the Year — Lisa Pollakis M.S, CHE, FMP

🏆 Chapter Contributor of the Year — Omni Corpus Christi Hotel

🏆 Chapter Purveyor of the Year — Lazy Beach Brewing

🏆 Co-Students of the Year — Brenden Kirby and Sonia Cisneros

🏆 Chapter Chef of the Year — Chef Dean Sprague, CEC, AAC

We also proudly congratulate Chef Rodney Livas on being presented with the Coin of Culinary Excellence by ACF National President Chef Rene Marquis, recognizing his outstanding work and commitment to SkillsUSA and culinary education.

And before the convention was over, we had one more milestone to celebrate:

Congratulations to Chef Rodney Livas, CEC, our newest Certified Executive Chef! Chef Rodney successfully passed his ACF Certified Executive Chef practical examination during the state convention, earning one of the American Culinary Federation’s respected professional certifications.

From our students and educators to our chefs, industry partners, and supporters, this weekend showed exactly what the Coastal Bend culinary community is capable of when we invest in one another.

We came to Dallas representing the Coastal Bend—and we’re coming home with plenty to celebrate.

Congratulations to all of our 2026 honorees and representatives. We are incredibly proud of you.

📢 Chefs of the Coastal Bend Chapter Update

Please note that we will not be holding our chapter meeting this Monday as we prepare for the upcoming Grow Local Farm-to-Table Event on Sunday, June 14.

This year’s event will feature brunch-style stations, and we’re looking forward to showcasing the incredible talent of our members while supporting local growers, producers, and our community.

Chef Dean will begin product pickup on Wednesday, with additional products arriving Thursday and Friday. Members are welcome to prep at the hotel or pick up product to prepare in their own kitchens.

👨‍🍳 Interested in participating? Let us know! We’d love to have more members involved. We can coordinate product pickup, station assignments, and menu planning as needed.

We will schedule our next chapter meeting for the following week, where we’ll discuss:
✅ Results from the Lazy Beach Beer Pairing Dinner
✅ Highlights from the Grow Local Farm-to-Table Event
✅ Registration and planning for State Convention

Thank you to everyone who continues to volunteer their time, talent, and passion to support our chapter and the culinary community of the Coastal Bend.

What a night at Flavors of the Coastal Bend at Port Royal in Port Aransas!

The Texas Restaurant Association – Coastal Bend Chapter partnered with local high school culinary programs for an incredible Mystery Basket Challenge, where chefs from the Chefs of the Coastal Bend TCA Chapter mentored student teams through creativity, teamwork, pressure, and ex*****on.

Chef Rodney Livas had the honor of mentoring the talented students from WB Ray High School — and we couldn’t be prouder to say they brought home 🥇 the win in the high school division

The mystery basket ingredients included:
• Chicken breast
• Rice Krispies
• Dried cranberries
• Plain Greek yogurt
• Bacon
• Hot honey compound butter

The Ray team created a beautifully executed chicken roulade stuffed with cream cheese, spinach, and a savory stuffing made from the hot honey butter and Rice Krispies. The dish was paired with a cranberry gastrique, sautéed green beans with bacon and onion, topped with a bacon-cranberry jam, and finished with toasted Rice Krispies brittle for texture and crunch.

These students showed composure, creativity, professionalism, and heart throughout the competition. Watching young culinarians think on their feet and execute under pressure is exactly what events like this are all about.

Huge thank you to the Texas Restaurant Association Coastal Bend Chapter, Port Royal, the mentors, volunteers, schools, and everyone who came out to support the future of our culinary industry.

And most importantly — congratulations to the WB Ray culinary team. You earned this victory. 🔥👨‍🍳🏆
