What the heck are Fish Collars? Great question.

Fish collars are NOT fish cheeks. The collar is the meaty section just behind the gills, around the pectoral fin, and trust us when we tell you it’s one of the tastiest parts of the whole fish.

A lot of the time, fish are cleaned for their fillets and the rest gets tossed. But around here, sustainable seafood matters to us. If there’s delicious meat on that fish, we want to use it!

We bread our collars and fry them ✨right on the bone with the fin✨, then drizzle them with sweet Thai chili sauce. Crispy, juicy, packed with flavor, and definitely worth getting your hands a little messy for.

What kind of fish? Whatever beautiful fresh fish we’re cleaning! Right now, we’ve got grouper & wreckfish collars. And if we’re being honest, most of you probably couldn’t tell the difference because they’re both so damn delicious. 😏

Hey guys, we’re cleaning up some wreckfish today, and we’ve got some beautiful fillets in the case! 🐟🔪

Wreckfish is a deep-water Atlantic fish that might be just as ugly as a grouper… but we’ll go as far as saying it might taste even better. 👀

White, mild and flaky with a firm, tender texture and a slightly sweet flavor. If you love grouper, this is one you’re definitely going to want to try.
