1 cup ricotta cheese
1/2 cup milk
1/3 cup vegetable oil
2 large eggs

Instructions:

Ingredients
1 red apple, cut into matchstick pieces
1 green apple, cut into matchstick pieces
2 tablespoons lemon juice
2 cups matchstick carrots
¼ cup yellow onion, finely diced
⅓ cup dried cranberries, sweetened
½ cup vanilla yogurt
¼ cup mayonnaise
1 tablespoon sugar
¼ teaspoon salt
¼ teaspoon black pepper
1 cup canned mandarin segments, drained

Instructions
Prepare the Apples: Slice both the red and green apples into matchstick pieces. Place them in a bowl, pour the lemon juice over the apple pieces, and toss well to coat. Let the apples sit for about 5 minutes to absorb the lemon juice, which prevents browning.
Combine Ingredients: In a large mixing bowl, add the matchstick carrots, diced onion, and dried cranberries.

A protein-packed homemade version of the popular Chipotle chicken bowl with juicy seasoned chicken, cilantro rice, guac, fresh salsa, and more. Tastes even better than takeout!

𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:
𝗖𝗵𝗶𝗰𝗸𝗲𝗻:

1 chicken thigh or breast (boneless, skinless)

1 tbsp olive oil

1/2 tsp smoked paprika

1/2 tsp cumin

1/2 tsp chili powder

1/4 tsp garlic powder

Salt & black pepper to taste

Juice of 1/2 lime

𝗖𝗶𝗹𝗮𝗻𝘁𝗿𝗼 𝗟𝗶𝗺𝗲 𝗥𝗶𝗰𝗲:

1/2 cup cooked white rice

1 tbsp chopped cilantro

Juice of 1/2 lime

Pinch of salt

𝗧𝗼𝗽𝗽𝗶𝗻𝗴𝘀:

2 tbsp shredded Monterey Jack or Mexican cheese

2 tbsp pico de gallo (fresh tomato salsa)

2 tbsp guacamole

2 tbsp sour cream or Greek yogurt

2 tbsp shredded romaine or iceberg lettuce

Pickled jalapeños or banana peppers (optional)

Lemon wedge (optional)

𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬:

1️⃣ Season & Cook Chicken
In a bowl, toss chicken with olive oil, paprika, cumin, chili powder, garlic powder, salt, pepper, and lime juice. Let marinate for 15 minutes. Cook in a hot skillet over medium heat for 6–7 minutes per side, or until golden and cooked through. Rest for 5 minutes, then chop into bite-sized pieces.

2️⃣ Prepare Rice
Mix cooked rice with chopped cilantro, lime juice, and a pinch of salt.

Ingredients:

1 ½ cups rolled oats

½ cup shelled pistachios, chopped

½ cup almond flour

¼ cup coconut oil, melted

¼ cup honey or maple syrup

1 tsp vanilla extract

¼ tsp salt

¼ cup dark chocolate chips (optional, for topping)

Instructions:

In a large bowl, mix oats, chopped pistachios, almond flour, and salt.

Add melted coconut oil, honey (or maple syrup), and vanilla extract. Stir until the mixture is sticky and combined.

Press the mixture firmly into a lined square baking dish.

Crockpot Parmesan Garlic Chicken Spaghetti

Ingredients:

3 boneless, skinless chicken breasts
1 cup chicken broth
1 tbsp olive oil
4 cloves garlic, minced
½ tsp salt
½ tsp black pepper
½ tsp Italian seasoning
1 cup grated Parmesan cheese
1 cup heavy cream
1 jar (15 oz) Alfredo sauce
8 oz Spaghetti pasta (uncooked)
1 cup shredded mozzarella cheese
Fresh parsley, chopped (for garnish)

Directions:

Place the chicken breasts in the bottom of your crockpot. Pour the chicken broth over the chicken, and drizzle with olive oil.
Sprinkle the minced garlic, salt, pepper, and Italian seasoning evenly over the chicken.
Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is cooked through and tender.
Once cooked, remove the chicken and shred it with two forks. Return the shredded chicken to the crockpot.
Stir in the grated Parmesan cheese, heavy cream, and Alfredo sauce.
Add the uncooked fettuccine pasta, stirring to coat the pasta in the creamy sauce.
Cover and cook on high for an additional 30-40 minutes, or until the pasta is cooked to your desired tenderness.
Once done, stir in the shredded mozzarella cheese until melted and creamy.
Garnish with freshly chopped parsley and serve.

🎃 1 can (15 oz) pumpkin puree
🍚 3/4 cup granulated sugar
🍯 1/2 cup packed brown sugar
🥚 2 large eggs
🥛 1 1/2 cups whole milk
🥄 1/2 cup heavy cream
🌿 1 teaspoon vanilla extract
🌰 1 teaspoon ground cinnamon
🥄 1/2 teaspoon ground ginger
🌰 1/4 teaspoon ground nutmeg
🌿 1/4 teaspoon ground cloves
🧂 A pinch of salt

INSTRUCTIONS:
1. Preheat your oven to 350°F (175°C) and lightly grease a 2-quart baking dish or multiple small ramekins.

Ingredients:
1 cup all-purpose flour
2 large eggs
1 1/2 cups milk
1/4 cup ricotta cheese
1/4 cup almond flour
2 tablespoons sugar
1 teaspoon vanilla extract
1/4 teaspoon salt
Butter or oil for cooking

Instructions:
1. In a mixing bowl, whisk together the flour, eggs, and milk until smooth.

Optional toppings:
