Toasted Almond Ricotta Muffins – Mornings on the Farm
There's something special about waking up to the smell of freshly baked muffins, reminiscent of cozy mornings spent on a farm. These Toasted Almond Ricotta Muffins are a delightful way to start your day with a touch of nostalgia.
Ingredients:
1 cup ricotta cheese
1/2 cup milk
1/3 cup vegetable oil
2 large eggs
1 cup all-purpose flour
1/2 cup almond flour
1/2 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup toasted almonds, chopped
1 teaspoon vanilla extract
Instructions:
1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease it lightly.
2. In a large bowl, whisk together the ricotta cheese, milk, vegetable oil, and eggs until smooth.
3. In another bowl, combine the all-purpose flour, almond flour, sugar, baking powder, and salt.
4. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
5. Fold in the toasted almonds and vanilla extract, being careful not to overmix.
6. Divide the batter evenly among the muffin cups, filling each about two-thirds full.
7. Bake for 18-20 minutes, or until the muffins are golden brown and a toothpick inserted in the center comes out clean.
8. Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
