At Haute Dawgz, we’re always looking for ways to take familiar foods and make them our own.

A great hot dog or smash burger starts with quality ingredients, but that’s only part of the story. The fun part is finding ways to push flavors further, take inspiration from different cuisines, and create something people haven’t had before.

For the OC Crawfish Festival, we knew we couldn’t just show up with a standard burger or hot dog. If we’re going to a crawfish festival, crawfish had to be part of the experience. So we put our own twist on it and created crispy popcorn crawfish to top both our smash burgers and our dawgs.

The result was exactly what we hoped for. You still got the rich beef from the burger, the snap from the sausage, but now with the added crunch, sweetness, and flavor of crispy crawfish on top. It was a perfect example of what Haute Dawgz is all about. Taking something people already love and finding a way to make it memorable.

Events like the Crawfish Festival are a reminder of why we do this. We get to experiment, meet amazing people, and share food that starts conversations.

After years in the culinary industry, countless events, farmers markets, private dinners, and building a loyal customer following, I am looking for the right investment partner to help bring a unique butcher shop and restaurant concept to life.

This concept will focus on handcrafted sausages made completely from scratch using premium cuts of meat, traditional techniques, and bold global flavors. Unlike mass-produced products, every sausage will be produced in-house with an emphasis on quality, craftsmanship, and transparency.

The vision extends beyond great food. We aim to build strong relationships with local cattle ranchers, livestock producers, and agricultural partners, creating a true farm-to-table experience that supports local farming communities while providing guests with the highest-quality products possible.

The business will combine a boutique butcher shop, retail marketplace, restaurant, catering operation, and specialty food production under one roof. Guests will be able to purchase fresh sausages, premium meats, house-made products, prepared foods, and enjoy a chef-driven dining experience that celebrates local agriculture and artisan craftsmanship.

We are seeking an investor who shares a passion for hospitality, food innovation, community involvement, and long-term growth. The goal is to create a destination that not only serves exceptional food but also becomes a cornerstone for supporting local farmers and educating consumers about where their food comes from.

Over the years we’ve snapped a lot of sausages 🌭🔥

From classic bratwurst and English bangers to elk, duck, andouille, chorizo, Italian sausage, mango habanero, camel, alligator, and flavors most people have never even heard of. Every one starts the same way: quality ingredients, proper technique, and a commitment to making something worth remembering.

The funny thing is everyone always asks us which one is our favorite. The truth is it changes all the time. Some days it’s a perfectly executed bratwurst. Other days it’s a wild game blend that shouldn’t work on paper but somehow comes together perfectly. That’s what makes sausage making so much fun. There are endless possibilities.

What you see in this compilation is more than just a bunch of snaps. It’s years of experimenting, refining recipes, learning from mistakes, and constantly chasing better flavor. Every sausage has a story behind it, whether it’s inspired by a region, a culture, a dish, or simply an idea we wanted to bring to life.

And we’re nowhere near done.

Andouille is one of our staples here at Haute Dawgz and for good reason. 🌭🔥

It is one of those sausages that has stood the test of time. While most people associate andouille with Louisiana and Cajun cooking, its roots actually trace back to France. French settlers brought their sausage-making traditions to Louisiana, where local ingredients, spices, and smoking techniques transformed andouille into the bold, smoky sausage we know today.

Traditionally, andouille is heavily seasoned, smoked, and packed with flavor. It became a staple because it was a practical way to preserve meat while creating something delicious and versatile. Over time it found its way into some of the South’s most iconic dishes including gumbo, jambalaya, red beans and rice, and countless family recipes passed down through generations.

The flavor profile is what makes it so memorable. Garlic, black pepper, cayenne, paprika, thyme, onion, and other spices come together to create a sausage that is smoky, savory, slightly spicy, and incredibly rich. Every region and every chef has their own spin on it, but the goal remains the same: big flavor.

At Haute Dawgz, we love andouille because it represents everything we appreciate about sausage making. History, craftsmanship, technique, and flavor all packed into one casing.

What a day at the Hyatt Regency Huntington Beach 🌭🍷

We had the chance to spend the day with Haute Dawgz, giving out samples, meeting so many friendly people, and connecting with chefs, vendors, and food lovers from all over Orange County.

Events like this are always a reminder of how great the local food community is. Everyone we met was welcoming, passionate, and excited to try something new.

Huge thank you to everyone who helped put the event together, all the chefs and vendors we met along the way, and everyone who stopped by to try Haute Dawgz.

Grateful to be part of it and looking forward to the next one.

Garlic confit is one of those simple techniques that changes everything. 🧄🔥

Slowly cooking garlic in oil transforms it from sharp and pungent to rich, sweet, and spreadable. The cloves become buttery soft while the oil takes on an incredible garlic flavor that can be used in just about anything.

We use techniques like this because flavor is built in layers. Sometimes the smallest details make the biggest difference.

Pork cheek is one of those cuts most people overlook, but chefs have been using it for years because of its incredible flavor and texture. Rich, tender, and naturally marbled, it brings a depth that you just do not get from standard pork trim.

When we make sausages, we’re always looking for ways to build more flavor into every bite. That means paying attention to the cuts we use, the fat content, the seasoning, and the overall balance. Pork cheek gives us the kind of richness that helps create a sausage that’s juicy, flavorful, and memorable from the first bite to the last.

It’s a reminder that great food is rarely about the most expensive ingredient. More often, it’s about understanding the ingredient and knowing how to get the most out of it.
