Freeman Family Farm, LLC Farming operations started in 2001 with 100 taps and an evaporator. We’ve expanded our sugar shack, added a reverse osmosis, and a new evaporator.

Today we stand at 550 taps and continue our family tradition in honor of our late father, Mark Freeman.

This morning we had the honor of presenting Ms. Joanna Chen with the 5th Annual Mark Freeman Memorial Scholarship including a $1,000 Award! Congratulations Joanna! Joanna will be attending Cornell University to pursue a degree in Biological Sciences.

Mark Freeman was a 1979 graduate of Coudersport Area Jr./Sr. High School. After high school, he served his community at Cole Care, a subsidiary of UPMC Cole for over 35 years. He was heavily engaged in his community, coaching various sports, volunteering as Assistant Scout Master, and several other roles. He left a legacy of leadership and a strong work ethic that the scholarship committee wishes to recognize in a graduating student.

The Mark Freeman Memorial Scholarship was created to provide monetary assistant to a Coudersport Senior who has shown a career interest in trades, healthcare, business, or agriculture. The scholarship honors Mark’s life and recognizes the academic and community achievements of students at Coudersport Area Jr./Sr. High School.

Some interesting history about maple syrup!

The “Maple Sugar Bubble” of the 1790s was a serious economic attempt to end slavery through capitalism. Dr. Benjamin Rush and Thomas Jefferson championed the sugar maple as a way to make the United States self-sufficient and morally superior to Europe. They argued that if Americans produced their own sugar, the brutal West Indian slave trade would become unprofitable and collapse. Quakers traveled through the northeast teaching settlers how to boil sap, branding the resulting sugar as a cleaner, godlier alternative to the “blood-stained” cane sugar imported from the Caribbean.

Long before the politics, Indigenous tribes had their own moral lessons about the syrup. The Abenaki legend of Glooskap tells that maple trees originally flowed with thick syrup year-round, making the people lazy. Glooskap diluted the sap with water to teach that sweetness must be earned through labor—a lesson settlers learned quickly, as it takes roughly 40 gallons of boiled sap to produce just one gallon of syrup.
