Why I Still Buy From Nebraska/Iowa Farmers
“Local” has become one of those words we’ve used so much in food that I’m not sure we hear it anymore.
Local beef. Local produce. Farm to table. Put it on a menu & everybody feels good.
But that’s not why I still buy from Nebraska & Iowa farmers. I do it because this is home.
I’m from Nebraska. I learned to cook here & built my business here. Nebraska fed me long before I ever understood enough about food to appreciate what was growing around me. And the older I get, the more that matters.
I want tomatoes that taste different in August than they do in January. I want to know why this year’s corn is sweeter. I want the ugly carrots, the peppers that all ripened at once, the farmer calling because he has way too much of something and asking if I can use it.
That relationship changes the way you cook.
Instead of sitting in a kitchen deciding what you want the world to give you, sometimes you open the back door and cook what Nebraska gave you that week. There’s humility in that. But there’s pride in it too.
Nebraska & Iowa aren’t usually the places people picture when they talk about great food. I used to think we needed to apologize for that. Now I think everyone else just hasn’t been paying attention.
We raise extraordinary beef here. Pork. Corn. Wheat. Dairy. Orchards. Wild plants. Vegetables pulled out of some of the richest soil. Generations of people who know land, animals & seasons in a way most cooks, including me, never will. That’s our pantry.
I think chefs have a responsibility to the place that feeds them. A farmer spends months growing something I may cook in 20 minutes. There’s something about that exchange that keeps your ego in check. They did the hard part. My job is to pay attention.
Buying from Nebraska & Iowa farmers isn’t charity nor a marketing strategy. And it sure as hell isn’t because “local” looks good printed on a menu.
They give me ingredients with a story that started in the same place mine did. Here.
I want someone to sit down, take a bite, & know exactly where they are.
Home.
