What’s for dinner tonight? Let me help!

I made these yummy home cooked meal in about an hour, and for just around $34.00
For comparison, a meal at Wendy’s was $37.00. No leftovers, no nutrition, just cheap, fast convenience foods. You are what you eat.

Main Dish: Potatoes, Onions, Peppers and Chicken Breast.
Side Dish: Sautéed zucchini and red onion

1- 2pk Seeds & Deeds Farm Boneless Skinless Chicken Breast- $8.25 lb ($17.00)
1 - qt Yukon Gold Potatoes- $4.00 (can use red potatoes too)
1- large white onion- $1.75 ea
2- organic green bell peppers- $1.50 ea ($3.00)
2- Organic Heirloom Tomatoes- $2.00 ea ($4.00)
2-jars homemade chicken stock- no cost but my time

Side Dish:
2- zucchini- $1.00 ea (2.00)
1 - red onion- $1.75 ea

Slice veggies, I tossed in olive oil and seasoned. Layer in cast iron skillet. Add chicken broth. I cut chicken breast into larger pieces and placed on top. Added tomatoes to broth. Seasoned all. Covered and cooked at 375 for an hour.

Meanwhile, slice up zucchini and red onion. Sautee in olive oil and seasoning.

This meal fed two men with hearty appitites, plus myself. It left some leftovers, however the teenage son really loved this meal and came out of his room twice to compliment me.

Holy moly, what a day! I just finished up a long day at the farm, I clocked out at 10:30 pm. I’m swimming in tomatoes, so I am working through about 70 lbs of tomatoes currently.

Today I picked 16 pecks or tomatoes and peppers. I’ll top them off tomorrow. What can I pick for you?!

Yesterday I spent the day preserving a variety of produce. I blanched all the tomatoes and got them skinned and separated by what I’m doing with them. I used the San Marzano’s for some yummy tomato soup. I tried two different recipes. It was 8:30 by the time the soup was ready to can. Since it was so late, I got out Big Bertha. My 941 All American Canner. She will hold 19 quarts or 32 pints.

While I sat and watched the canner I snapped green beans. No rest for the weary! I don’t worry too much about grocery store prices, most of what we eat we grow, or we buy in bulk. This is how our ancestors did it, and this is how I’ve been feeding my family for the past 20 years.

This week is another great week of canning weather. I’ve got all your tomato needs.
All grown organically, seed, soil and fertilizer. We grown per the organic guidelines. Have questions about our operation, just ask. I love to talk about what’s growing Seeds & Deeds Farm and the future seeds we’ve planted!
