That ginger isn't a topping! It’s a "palate cleanser." Eat a slice between different types of sushi to reset your taste buds so you can fully enjoy the unique flavor of the next piece.

Did you know? In Japan, it’s traditional to put a small dab of wasabi directly on the fish instead of mixing it into the soy sauce. This keeps the flavors clean and the soy sauce clear!
