This is how I’ve been cooking pounds of Chanterelles in a hurry.

- Coarse chop or shred mushrooms in a 13x9x3.5 inch pan

-Top with one packet (3lbs) bacon ends and pieces

-Bake uncovered at 350 for 45 minutes to one hour or once bacon browns.

-Strain juice once everything is cooked and let sit at room temp to separate lard from Chanterelle liquid.

I usually only keep the golden delicious juice that cooks down and discard the lard but you could save it for later use.

This method can be used for any mushroom. We’ve been using them in chicken pot pies but the possibilities are endless.

We have some exciting news to share! As some of you know, I (Megan) am a server at the Longbranch Saloon here in Creston. We recently got a new head chef, and she is really into fresh, local, farm-to-table ingredients and dishes. She's made some killer changes to the menu, and has started using some of our produce!! Right now our tomatoes are being used in the new chips and salsa app, mild green peppers in the new "Cobb" allero Salad, and our jalapeños on the oh so popular Candied Jalapeño-Bacon Burger! We will be working with her to provide seasonal items for fun new specials, and will be planning next year's garden with their menu needs in mind so you all can enjoy more fresh local ingredients at the best food joint in town! I'll be working tonight and all weekend, come down and say hi, and check out the new menu!
