Eggplant Rollatini

This recipe combines tender roasted eggplant slices with a creamy ricotta and spinach filling, rolled up and baked in a rich marinara sauce topped with melted mozzarella. It's a fantastic alternative to heavier pasta dishes, providing all the flavor with fewer carbs. With fiber-rich eggplants, calcium-packed ricotta, and nutrient-dense spinach, this dish is both delicious and nutritious!

2 large eggplants, sliced lengthwise into 1/4-inch slices
2 cups ricotta cheese
2 cups fresh spinach, chopped
1 large egg, lightly beaten
2 cloves garlic, minced
1/2 cup grated Parmesan cheese
Salt and pepper to taste
2 cups marinara sauce
1 cup shredded mozzarella cheese
Olive oil for brushing

Directions:
1. Preheat oven to 375°F (190°C). Roast eggplant slices until tender.
2. Mix ricotta, spinach, egg, garlic, Parmesan, salt, and pepper.
3. Roll ricotta mixture in eggplant slices, top with sauce and cheese, and bake for 25-30 mins.
