For those of us that are health conscious, I came across this information from the medical community about Durum wheat pasta.

Durum wheat pasta is a nutritious, high-protein, and high-fiber food that supports sustained energy and heart health due to its low glycemic index (25–45). It is rich in iron, magnesium, and B vitamins, helping with digestion and satiety. Its firm, al dente texture holds up well to cooking.

Key Health Benefits of Durum Wheat Pasta

• Low Glycemic Index (GI): Durum wheat pasta is digested slower than regular white pasta, providing a steadier release of energy and a lower, more controlled effect on blood sugar levels.

• High Protein & Fiber: It often contains higher protein and fiber levels than common wheat pasta, aiding in digestive health and keeping you full longer.

• Rich in Essential Nutrients: It is a good source of iron, which helps combat fatigue and anemia, along with magnesium, phosphorus, and zinc.

• Lower Gluten Sensitivity: Because it lacks the D genome found in common bread wheat, some individuals may find durum wheat easier on the digestive system.

• Superior Texture: Due to high gluten strength and hard texture, it maintains an al dente (firm) shape well after cooking, which is ideal for pasta salads, baked dishes, and saucy recipes.
Rich in Antioxidants: Contains nutrients like lutein, which can contribute to eye health
