Dinner tonight. I sliced the chicken Hasselback style and added Hasselback potatoes. The chicken was so moist and tasty. I paired the whole thing with Parmesan carrots, which, while I didn’t NOT like them, pretty much just tasted like Parmesan 🤷🏻‍♀️

No pounding, rolling or breading for this version of a classic. Super easy to assemble and just as tasty.

Ok, so tonight I'm making sour cream chicken enchiladas for dinner. I put chicken breast (partially frozen) into the instant pot and added a capful of the Makin' Magic Chicken Seasoning along with some water. Cooked that and shredded it. Added Si Si Cilantro, cumin, shredded cheese, and a little cream cheese. I filled each soft corn tortilla and topped with a sauce made with butter, flour (use corn starch to keep it GF), the broth from cooking the chicken, sour cream, and Seasoned Salt. Topped the rolled tortillas with the sauce and some cheese. It's baking now. I wish you all could smell my kitchen right now! :D
