In the early 1800's immigrant Fred Hunziker came to the United States from Switzerland. He was a butcher by trade and continued that work here in Croghan. He married Louise Schneeberger and he and his young brother-in-law Jacob Frederick Schneeberger worked together in

the meat business where they made a ring bologna from a recipe that Hunziker had known in Switzerland. Distribution was in the Croghan area, neighboring hamlets and also to Adirondack lumber camps where lumberjacks dubbed it 'Croghan Bologna'. In 1907 at age 22 Jacob Schneeberger left the business to work for the J.P. Lewis paper mill in Beaver Falls, N.Y. where he worked for over 50 years until his retirement. Fred Hunziker hired Elmer "Buddy" Campany to come and work for him. Buddy had been the meat cutter at the Fenton House, a busy Adirondack hotel located at Number Four. Buddy married Jessie Bush who had worked in the Number Four area for the Ohio owners of the National Cash Register Company who had vacation property there. Both Buddy and Jessie were Croghan natives and probably happy to again be living in their hometown. Jessie is remembered as working very hard at canning beef which was a necessity due to limited refrigeration and which could then be sold to customers. Hunziker had seen two fires destroy the village and after the second one in 1912 the Meat Market was built with bricks made right here in the township which match several other buildings that remain here in the village. In 1919 Hunziker retired and sold the business to Buddy Campany. Buddy and Jessie lived in half of the building and several of their children were born here. The children recall peeling garlic and the girls recall doing some of the bookkeeping. A cousin Peter Turck recalled that his mother raised an acre of garlic which she grew for the meat market and his father had one barn full of pigs that were also sent to the meat market. Buddy's brother-in-law Leslie "Cooper" Bush also worked at the Meat Market for many years as did many other family members and young men of the community. In 1951 Buddy retired and sold the business to his two sons John Gilbert and Anthony and to Hunzikers nephew Carl Nuspliger, whom Hunziker had raised. In 1963 Carl Nuspliger retired, he had worked for over 50 years at the Market. He sold his share to John and Anthony Campany. In the late 1980's Anthony retired selling his share to John Gilbert. In 1995 John Gilbert sold the business to his son John Michael Campany, who is now keeping tradition selling the business to his daughter, Blaine Elizabeth Campany, making it a fourth generation owned family business.

Uh oh!!! One more week… and trust me, it will be worth the wait. ❤️

If you've been following along with our renovation journey, first of all, thank you. The support, encouragement, and excitement you've shown us over the past couple of weeks has meant more than you know.

As much as we'd love to throw the doors open tomorrow, we've decided to stay closed for one additional week so we can finish up the little details, install our new coolers and meat cases, and wait on a few final shipments that are still making their way to us. Construction has a funny way of reminding you that timelines are more of a suggestion than a guarantee!

But let me tell you… it's finally coming together. 🥹 The vision we've had in our heads for so long is starting to come to life right before our eyes, and every day we walk in, we get a little more excited. Seeing a building that's served this community for generations get a new chapter while honoring its history has been incredibly emotional. Shout-out to NV Outdoors for the lengths they are willing to go to get every detail just right. Show them some love for us cause they are moving incredibly fast for the amount of work we put on them ❤️

To give us enough time to stock the shelves, fill the cases, and get everything running the way it should, Croghan Meat Market will officially reopen on Tuesday, June 23rd. We can't wait for you to see what we've been working so hard on.

In the meantime, if you're craving your favorite Croghan Bologna, our friends at Miller's Meat Market 27 down the street have been helping us out and are selling a bunch for us while we're closed. We're so grateful for their support and for making sure you don't have to go without.

Renovation update!

This week has been exciting because we're finally starting to see the vision come together. The authentic tin ceiling is back up in the market, the walls are scheduled to be finished this week, and work has officially started on the stone overlay for the front porch. I have to admit, I'm especially excited about that last part—I won't miss painting that porch concrete every year!

Watching the crew install the tin ceiling gave me a whole new appreciation for the craftsmanship that originally went into this building over 100 years ago. The amount of detail and patience required is incredible, and it makes you realize just how much work the original builders put into creating something that would stand the test of time.

We're still waiting on a few shipments to wrap everything up, including our new front doors, which have been delayed. We're hoping and praying they arrive in time to keep everything on schedule, but that's construction for you, and honestly, I'm not surprised. On the bright side, we finally received the last of our new meat cases on Friday, which was a huge relief.

I always try to have every detail planned out before starting a major project because my goal is to never be closed for more than two weeks at a time. Of course, there are always things outside your control, but we've had so much support throughout this process that I'm trying not to stress too much and just enjoy watching the transformation happen.

Yesterday was a tough day.

One of the hardest parts of this renovation has been saying goodbye to pieces of the old store that have been here for generations. Yesterday we took down the original ceiling from 1912. We explored every option to save it, but after years of moisture damage, corrosion, and missing sections, there simply wasn't a practical way to restore it or match it within our budget. I did save a few pieces, and I'll definitely be hanging on to them as a reminder of the store's history.

I'll admit, seeing it come down was emotional. Even though it had been hidden above the drop ceiling for years, there was something comforting about knowing it was still there. I think I was feeling all the emotions that come with being the fourth generation to care for this place and wanting to honor its past while preparing it for the future.

Today we're removing the old coolers and continuing the demolition so we can finally start putting things back together.

I also want to take a moment to give a huge shoutout to NV Outdoors. Any stress I've been feeling has absolutely not been because of the people working on this project. In fact, they've made this process so much easier. From day one, they understood the vision I had for bringing the store back to its roots, and they've treated this project with the same care and attention to detail that I would. Every member of their crew has been knowledgeable, respectful, hardworking, and incredibly capable.

When you're trusting someone with a building that means this much to your family and community, that peace of mind is priceless. I honestly can't imagine tackling this renovation with anyone else.

We're making progress every day, and I can't wait to show everyone what we've been working on. ❤️ NV Outdoors

🚧 A quick heads up! 🚧

Starting June 1st through June 13th, our store will be closed for construction as we begin a renovation project we’ve been dreaming about for a long time.

Our goal is to bring the market back in time and restore some of that old-store charm that so many of us remember and love. We’re incredibly excited to finally see it start coming together—and even more excited to share it with all of you throughout the project and when the doors reopen.

We had originally hoped to tackle this project earlier this month, but as construction tends to go… things got pushed back a little. We appreciate your patience while we make it happen.

Small renovations have started. This office ceiling was just the beginning, but what we’re really excited about is what comes next.

For years, the original ceilings in the market have been hidden above the drop ceiling. We’ve always loved that old-time character, even if most people never got to see it. Unfortunately, time wasn’t kind to the original tin—too much damage and too many missing sections to restore.

So instead, we’re bringing that spirit back the right way. Next up: an authentic metal ceiling in the main market area to help bring back the old feel of the store only our grandparents remember.

A little step now… but the best part is still ahead.
