Processing is done and I’m feeling good about putting clean food in our freezers. The carcasses (backbone) and feet will be made into collagen-rich bone broth this winter when I don’t have so much to do. The livers will be dehydrated for dog food. The gizzards and hearts are hidden in the freezer just for me (I’m not kidding!).

Whew! What a weekend!

We processed 28 broiler chickens on Saturday, all while teaching a class to some folks who wanted to learn the process. It was a beautiful, but hot day! We not only put some birds in our freezer, we helped pass along the valuable skill of growing and processing chicken.

Today, mom and I cored, roasted, and peeled 44 lbs of Roma tomatoes; then crushed them up for canned crushed tomatoes. I do these in the pressure canner even though they CAN be water bathed. However, I can fit 14 quarts in my pressure canner for 15 minutes at 15 psi vs 5 quarts in my WB canner for 50 minutes (at my altitude). The PC is the way to go! These are the best Romas straight from Gary Swafford Farms. Ask for the ! Look at that bright red color.

Had some leftover crushed tomatoes… pizza sauce is in the WB canner now!

I’m tired but feeling accomplished!!

Did you have a productive weekend?

Psssttt… you KNOW all that deserves ice cream!! Whoop whoop!🙌

Raising chickens for meat is not hard physically… maybe emotionally … but not physically. About 5 years ago, I was blessed with the opportunity to shadow a young couple in Wartburg, TN, who allowed me to work along side them while they processed a batch of meat birds. Their lessons were so complete that I was able to process my own birds the following year. Since that time, I have raised and processed hundreds of birds. I appreciate the process of celebrating the arrival of the adorable chicks and making sure they are comfortable in their brooder. I make sure their needs are met in a humane way for as long as I am raising them… typically 9 weeks. I don’t name them, obviously! But I do treat them well… make sure they have water. Make sure they have food. Make sure they have adequate shelter and clean grass. I like to grow out the White Rangers from the Ranger Hatchery because they closely resemble the typical Cornish cross, BUT, they are much more active and resilient.

Tomorrow is processing day. We realize that we will be “culling” the animals we have been feeding for 9 weeks and we don’t take that process lightly. We make sure the process is completed as humanely as possible. Some, including us, may joke about “freezer camp” and “last suppers,” but deep down we respect the process and appreciate the clean food that r are about to put up.

It’s not easy… but it is comforting to know the food we are eating was treated humanely… with no antibiotics… no vaccines… just clean food and loving care.

Happy night before camp, chickens 🐓

True or False?

1. Your jar sealed, so it's safe.
2. You can sub one type of pepper for another in a tested recipe.
3. I don't need to peel the skins off my tomatoes.
4. Canning recipes can be modified.
5. It is ok to re-use lids (flats).
6. Acid must be added to each jar when canning tomatoes.

Safe canning procedures! I am a graduate of the Purdue Extension Mastering Home Food Preservation class. This 4-day workshop provided invaluable information about safe canning. I’ll post some safe canning sites in the comments.

Haven’t had eggs in 3 days… now I know why. This is about the 5th one we have removed from the coop this year. Definitely a different one as this one is huge. Not harmed at all… in fact we made sure he went away full 😂😂.

I’m so over this… just a few more hundred 😂
