Hey there friends, it's been a long time! For personal health reasons, I have chosen a sober future and have shifted focus to creating a business of ready to drink mocktails, Open Bar Mocktails. Please consider giving my new page a follow. While the alcohol will no longer be included, you can expect the same range of bold and innovative flavors. I still plan on doing festivals and other tasting events. The GOOD NEWS is that the process for getting things going commercially should be easier and faster than the mead side of things.
I would really appreciate a follow on the new page and even a share if you are feeling generous.

Good morning everyone! Unfortunately, we will not be personally attending Milwaukee Brewfest this afternoon. The good news is that there will be Off Balance mead pouring for your enjoyment. There are some real bangers here and you don't want to miss them!!!

My friends at Beer Barons of Milwaukee will be pouring a number of selections. Here's what to look forward to:

It's Gotta Be the Shews - Blueberry Cashew mead - 14.6%

Berry Solera - Blend 1 - Black and red raspberry mead aged in a rye whiskey barrel - 14.7%

Incidental Foursome - Tart cherry, aronia berry, vanilla, and amburana wood - 15.7%

Diddy Do It? - Concord grape session mead - 7.0%

Timed offerings include:

D4B - Rye whiskey and maple bourbon barrel aged blueberry, banana, and vanilla - 12.6%

Madeira Solera - Madeira style mead that went through extended aging with cab franc grapes, carmenere grapes, red raspberry, and red currants - 16.0%

Fermenters empty, barrel is filled. Can't wait to see how this Kallas Honey, Inc clover trad ages in this apple brandy barrel. Going in at about 14.2% ABV, semi-sweet, this is planned to only really get a kiss of the barrel. Can't wait to see how this turns out in the next few months. Also, thank you to Peter at Second City Meadery for the assist with the barrel. Great community of friends are making this project happen.

Another one bites the dust. Uncorked Me Wisconsin Wine Festival is in the books. Thank you to everyone who came out and shared mead with us yesterday. It's always great treating mead enthusiasts and introducing people to mead. Thanks also to Jared Sutliff for helping behind the jockey box. We poured a ton and shared a lot of laughs. We just hope you enjoyed everything; it's time to get back to the grind and create the next batch.

Playing around with some gin botanicals in a dry orange blossom trad to work on a cocktail style mead, if that's noe a thing. Very interesting to see how things like juniper, coriander, cardamom, and grains of paradise, amongst a few others, play together in a honey based beverage. Probably adding a bit of sparkle to this you really make those flavors and aromas pop.
