Things I learned today about growing onions - especially growing them in the north:
- Choosing varieties, you want to choose "long day" onions if you live anywhere above 35° latitude
- Starting them from seed is better. Starting them from sets, they think they're in their second year and tend to put more energy into seeding. Even if they don't get to flowering and seeding, they're working harder toward that than bulbing.
- Start them early. Start indoors about 5 weeks before last frost if possible. They need to grow as much as possible before summer solstice. That's when they move from vegetative to bulbing cycle.
- The more leaves they have, the better. Each leaf grows one of the layers on the inside. The more leaves they have, the more layers the bulbs have.
- Pruning the onion greens can help the leaves from getting too heavy and crimping the neck. As soon as a leaf gets weak, pinch off just below where it bends. It will pull the neck down and stop the bulb from continuing to flesh out. The greens are also tasty in soups and sauteed dishes. :)

Dehydration trials. Veggies cut to different size. Will see what dries well, keeps well and reconstitutes well. @ Cummington, Massachusetts

Seeds saved from a lovely organic Delica squash some friends gave us. Nice almost buttery flavor. Want try growing some next year.
