Farm-to-table doesn’t get much better than a July banger.

Like Peach-Glazed Pork Chops with Purple Hull Peas, Roasted Eggplant & Charred Sweet Peppers, built from this weekend’s haul at the Clarksville Downtown Farmers Market.

The peas were savory and creamy, simmered low and slow and making your mouth water from the smell while knowing the wait is worth it.

The chops hit that sweet-savory balance that makes you stop mid-bite, thanks to the peach jam dropping notes of sweet summer fruit.

And the eggplant and peppers? That’s the kind of supporting cast that quietly steals a scene.

We started the chops on the grill for a good char, finished in the cast iron with the peach glaze, and had the discipline (barely) to not to eat it straight out of the pan before it hit the plate.

For the last few weeks, we've been slowly building our ‘farm chef’ repertoire with Saturday morning farmer's market finds turned into what we're generously calling culinary masterpieces.

We're learning as we go, and we'll be sharing our adventures here in the hopes that we inspire you to take a chance on something new. (Or just drool along with us and badger us for an invitation to Saturday dinner on the farm.)

Our first dish: Honey-Glazed Pork Chops with Smoky Squash & Snap Pea Gremolata.

It started with thick-cut pork chops from Iron & Elder Farm and an armload of spring vegetables (squash, cauliflower, and snap peas) from Sweeter Days Farm, both found on a sunny Saturday morning stroll through the Clarksville Downtown Market. If you haven't stopped at either stand, fix that. (And follow them on the socials for fun updates!)

The chops went into cast iron and came out with a crust that made a satisfyingsound when you cut into them. Golden, glazed, and smelling like something between a steakhouse and a honey jar. Tender all the way through. The glaze hit that sweet-savory note that makes you close your eyes for a second.

The gremolata, a simple, bright mix of the roasted snap peas and squash finished with herbs, brought the smoke and the balance. It's the kind of vegetable preparation that makes people who "don't love vegetables" ask for more.

I'm not going to lie: I wanted to just shovel it straight into my mouth. I didn’t…because I’m an adult (shoosh, Sarah) and I actually wanted to taste each bite. That's the benchmark we're using going forward. Seems legit.

We used cast iron, but a regular skillet works. And if you've been thinking about picking up a cast iron pan, they run about $20 in the camping section at most stores. It’s worth the investment.
