Cabernet Franc, Ascona Vineyard, now on the list in Los Gatos. Had a crazy good pairing with a pork steak. Looking forward to going back and trying it with some brisket and ribs. The Bywater is the first place my wife and I think about when we want to go out for lunch or dinner. Fantastic food and impeccable vibes.

2022 Ascona Cabernet Franc. In this video I am pumping over juice from 10% of crushed grapes on the bottom, to freshen up the uncrushed grapes above. 100% whole clusters including the 10% of Cabernet Sauvignon in this co-ferment. 2022 was marked by a intense week and a half of temps over 100 degrees. The Cabernet franc was not ready during the heatwave, which allowed them to hang in the cool foggy mountain air that followed. On day of harvest, the grapes were very cold and dripping with fog. That cold freshness got preserved in the wine through a very ‘low and slow’ fermentation. The wine presents with fruit from the California warmth with a dichotomous vibrance herbs and salinity from coastal influence. Only 25 cases made. From Brent wines are always made to be enjoyed with a special meal.
