🔥 SMOKED BIRRIA BEEF BITES 🔥

Classic birria meets wood-fired BBQ. We took chunks of chuck roast, seasoned them up, and smoked them over a Dutch oven full of chiles, tomatoes, garlic, onion and beef broth on the Lone Star Grillz El Fuego Trio.

As the beef smokes, all those drippings fall right into the consommé. Then everything gets blended together and braised until the beef is fall-apart tender.

Perfect over rice and beans—or turn it into birria tacos, quesabirria, burritos or tostadas.

RECIPE

Ingredients:
• 3–4 lb chuck roast
• Lone Star Grillz Texas Fusion & South of the Border seasonings, or your favorite beef rub
• Olive oil
• 5 dried guajillo chiles, stems & seeds removed
• 2 dried ancho chiles, stems & seeds removed
• 3 Roma tomatoes, quartered
• 1 large white onion, quartered
• 6 garlic cloves, peeled
• 1 chipotle pepper in adobo sauce
• 4 cups beef broth
• 2 tsp Mexican oregano
• 1½ tsp ground cumin
• ¼ tsp ground cinnamon
• Kosher salt & black pepper to taste
• Tortillas, onion, lime, rice and beans for serving

Directions: Cut chuck roast into roughly 1½–2” pieces. Lightly coat with olive oil and season generously. Add the chiles, tomatoes, onion, garlic, chipotle, beef broth, oregano, cumin, cinnamon, salt and pepper to a Dutch oven.

Place a rack over the Dutch oven and arrange the beef above it so those drippings fall into the birria mixture. Smoke at 250°F for 2–2½ hours until the beef has developed a good bark and the vegetables and chiles have softened.

Blend the softened vegetables and chiles with about 1 cup of the hot broth until smooth. Add the smoked beef to the Dutch oven, pour the blended mixture over it, cover and cook for approximately 2 more hours, until the beef is tender and probes easily.

Rest about 30 minutes and dig in. 🔥

🔥 Crispy chicken thighs in 3 simple steps.

Juicy on the inside, crispy skin on the outside, and cooked over a live fire on the Lone Star Grillz Santa Maria Grill.

We start low to slowly render the fat, drop the grate to crisp up the skin, then let them rest before serving. Simple, but it works every time.

🔥 Overnight Smoked Brisket on the Lone Star Grillz El Fuego Trio

Brisket doesn’t have to mean getting up at 3 AM. We put this one on overnight at 225°F, let the El Fuego Trio do the work, then wrapped, finished and gave it a long rest so it was ready when we were.

RECIPE

Ingredients:
• 1 whole packer brisket — we used 12.6 lb.
• Worcestershire sauce for binder
• Lone Star Grillz Texas Bold & Texas Fusion Rubs, or your favorite beef rub
• 2–3 tbsp. melted beef tallow
• Butcher paper

Directions:

1. Trim the fat cap to about ¼” and remove hard fat and thin edges.
2. Lightly coat with Worcestershire sauce and season generously.
3. Preheat the pellet side of the El Fuego Trio to 225°F.
4. Put the brisket on around 9:30–10:00 PM and insert a probe into the thickest part of the flat.
5. The next morning, when the bark is set and internal temp is around 165–175°F, wrap tightly in butcher paper with 2–3 tbsp. melted beef tallow.
6. Continue at 225°F or increase to 250°F until the flat is probe tender, usually around 198–205°F.
7. Vent for about 15 minutes, rewrap and rest in a warm oven, cooler or heated food holder for 2–4 hours.
8. Slice the flat across the grain about ¼” thick. Rotate the point and slice slightly thicker.

🔥 Smoke it overnight. Rest it long. Eat when you’re ready.
