🌽 Tonight we’re having Mexican Street Corn! 🌽

What’s on your supper menu tonight?

If you’ve never made Mexican Street Corn, you’re missing out! It’s one of our favorite ways to enjoy fresh sweet corn this time of year.

🌽 Mexican Street Corn (Elote)

Ingredients

* 4 ears fresh sweet corn
* 2 tablespoons melted butter
* ¼ cup mayonnaise
* ¼ cup sour cream
* ½ cup crumbled Cotija cheese (or grated Parmesan if that’s what you have)
* 1 teaspoon chili powder
* Juice of ½ lime
* Chopped fresh cilantro (optional)

Directions

1. Grill the corn until lightly charred on all sides (or boil it until tender).
2. Mix together the mayonnaise and sour cream.
3. Brush the warm corn with the mayo mixture.
4. Sprinkle generously with cheese.
5. Dust with chili powder.
6. Finish with a squeeze of fresh lime juice and a little cilantro.
(we top ours with Tajín® Clásico Seasoning)

Simple. Messy. Absolutely delicious! 😋
