☀️ Good morning from DaleWood Farms!

Join us live as we kick off another productive day on the farm and in the kitchen.

This morning we’re packaging up the smoked chicken feet from yesterday’s smoke. Nothing goes to waste around here—these will be used later for rich homemade stock, bone broth, and traditional chicken jelly.

We’re also loading the smoker with pork skins to start the next batch of smoked pork rinds. If you’ve ever wondered how some of our farm-to-table products come together, this is your chance to see part of the process firsthand.

We’ll also talk about some of yesterday’s progress on the farm, ongoing projects, livestock updates, and whatever else the morning brings.

Part 2: The Results Are In.

Two hours in the smoker and the chicken feet have officially entered the next phase of the experiment.

Most people would never think twice about chicken feet, but here at DaleWood Farms we’re always looking at how to use more of the animal and learn something new in the process.

Tonight we’re taking a look at the finished smoked feet, discussing the next steps, and getting them ready for storage until we’re ready to turn them into a rich, collagen-packed stock. If all goes according to plan, these will eventually become a smoked chicken broth that sets up like jelly in the refrigerator.

Good morning from DaleWood Farms.

Today we’re starting a new experiment and documenting every step of the process.

Most people see chicken feet and wonder why anyone would buy them. We’re wondering what they can become.

This morning we’ll be sorting, counting, inspecting, weighing, and smoking chicken feet before vacuum sealing and freezing them for a future stock-making project. Along the way we’ll be keeping notes, tracking weights, recording yields, and building a process we can repeat and improve over time.

One of the things we’ve learned on the farm is that there is value in understanding the whole animal and making use of parts that often get overlooked. Whether this turns into an incredible smoked stock, a new farm product, or simply a lesson learned, we’re excited to find out.
