First cook on the new Pit Boss Grills 850 Competition Series. Gotta say, this thing is rock solid on temp. St Louis ribs using Stubb's BBQ Sauce as a binder and seasoned with our very own Soon-to-be-Famous and our Mother-in-Law blend. Smoked naked at 225° for 3 hours, wrapped in foil at 250° for 1 hour, then naked again for another hour. In hindsight, I’ll do a full 3-2-1 next time. Overall, we are pleased with our newest family member.

We’re doing another one today. The key difference… I am about 80lbs lighter and Jacob is almost 40lbs lighter. Should be a wholly different outcome.
