Burrata Toast

1 slice sour dough bread
3 slices of prosciutto
Burrata cheese
Hot honey (I used )
Olive oil
Salt + pepper

Toast bread and assemble all ingredients onto bread. Drizzle with honey and olive oil.

This WILL be your new favorite breakfast toast.

Italian Stuffed Bell Peppers

2-3 bell peppers
1 pound spicy Italian sausage
1 small can diced tomatoes
1 jar marinara sauce
1/2 onion, diced
Fresh mozzarella
Italian seasoning

Pre heat oven to 350°

Sauté diced onions with a small spoonful of minced garlic. Cook until soft

Add Italian sausage and cook until browned. Drain and add marinara sauce and diced tomatoes. Allow sauce to heat up.

Cut pepper in half and take out seeds. Stuff each pepper with meat sauce and place into a casserole dish.

Dill casserole dish with 1/2 inch of water, cover and bake for 20 mins.

Take out and place one click of mozzarella cheese on each pepper. Broil for 5-7 mins.

Peanut Butter Cup Cookies

1 egg
1 tsp. vanilla
½ cup creamy peanut butter
½ sugar or coconut sugar
½ almond flour or all-purpose flour
¼ tsp salt
½ tsp baking soda
4-5 chopped TJ’s peanut butter cups

Pre heat oven to 350

Whisk egg, sugar, vanilla and peanut butter with a fork until smooth consistency

Mix in flour, baking soda and salt

Fold in peanut butter cups, form into 8 golf ball size portions. Bake for 10-12 mins.

Crock Pot Kale, Sweet Potato and Chicken Soup

2 large sweet potatoes, peeled and diced
2 cups of kale, stems removed
1 pound chicken breast or chicken thighs
1 box chicken bone broth
1 box chicken stock
2 tsp salt
2 tsp Italian seasoning

Place all ingredients into crock pot, cook on low for 4-6 hours. Once chicken is cooked, take out to shred, return to pot and add additional seasonings if needed.

This year. Wow. This community, I can’t thank y’all enough. I’m so excited for what this past (almost) decade has brought me and I pray that this last year of my twenties will bring me the best year ever.

this easy 3 ingredients TJ meal, you need!

1 chicken breast
Orzo pasta
TJ’s Lemon Arugula Basil Salad mix

- Boil 2 cups water, add 1 cup of orzo pasta and cook for 8 mins. Drain once done.

- Season chicken with chipotle pepper, garlic powder, cumin, salt and pepper.

- Cut chicken into 1 inch cubes and cook in and oiled pan until complete. Drizzle honey and mix chicken again.

- Toss salad mix and add into orzo pasta.

Simple. Easy. Delicious. My new favorite meal.

POMEGRANATE GIMLET!

1 shot vodka⁣
+ 2 shots pomegranate cocktail mix⁣
Pour of sparkling water or soda water⁣
Lime juice⁣
Pomegranate ice cubes⁣

GARNISH:
Fresh pomegranate seeds⁣
Cinnamon Sugar for the rim⁣
Rosemary⁣

- Make homemade ice cubes with pomegranate seeds within each cube.⁣

- Once frozen, place cubes into cup.⁣

- Pour all cocktail ingredients into a shaker with ice and shake it up!⁣

- Use lime wedge to wet the rim of the glass, dip into cinnamon and sugar mixture.⁣

- Pour over ice and garnish with pomegranate seeds, lime wedge and rosemary.⁣

The holiday season is here and reposting on of my favorite cocktails that I know will be a hit! The best month is finally here! 🎄
