Soursop Coconut Smoothie

Ingredients
1 cup soursop fresh pulp or frozen
1/3 cup coconut chunks
1 cup coconut milk or coconut water
ice cubes

Instructions
Place all the ingredients in a blender cup (no seeds if using fresh soursop!) and work it for about 1-2 minutes.
Serve with coconut shavings and chia seeds

3-Ingredient Coconut Tropical Smoothie

Ingredients
1 cup frozen No-Sugar Added Tropical Blend Fruit (I used Market Pantry brand from Target’s frozen section, which is a blend of Mango Chunks, Peach Slices, Pineapple Chunks, and Banana Slices)
1 (5.3 ounce) container So Delicious Dairy Free Coconut Milk Yogurt Alternative (I used Unsweetened Vanilla flavor, but any flavor will work)
¼ cup Coconut Milk Coffee Creamer OR regular coconut milk
Optional: shredded unsweetened coconut (for garnish)

Instructions
Place all ingredients (except for shredded coconut garnish) in a high speed blender. Puree until smooth. Serve immediately and garnish with shredded coconut, if desired.

Notes
You can use either the coconut coffee creamer (for richer, creamier shake), or swap it out for regular, unsweetened coconut milk for a lighter option.
Nutrition information is based on the coconut coffee creamer.
If you're not dairy-free and vegan, you can substitute with regular vanilla yogurt or any flavor Greek-style yogurt.

Toasted coconut smoothie

Ingredients
1/4 cup toasted coconut, plus more for sprinkling
1 banana
juice of 1 orange (or sub the whole orange, or 1 cup pineapple)
3 Medjool dates (pitted)
2 teaspoons turmeric root (or 1/2 teaspoon ground turmeric)
2 slices ginger ( 1/2 teaspoon ground ginger)
1/4 teaspoon ground cinnamon
1/2 teaspoon vanilla
1 teaspoon bee pollen (optional, for allergies, not vegan)
1/2 cup nut milk
2 cups ice ( please don’t leave out!!!)

Instructions
Toast the coconut flakes in a dry skillet over medium-low heat until golden and fragrant. This is key.
Place the banana, orange juice, dates, coconut, turmeric, ginger, cinnamon, vanilla and nut milk in a blender and blend until smooth. Add the ice, one cup at a time and blend unti smooth.
To get smoothie to mound up like the photo, add 1/2 cup more ice.
Pour into a 16 ounce glass and top with toasted coconut.

Indulge.

Notes
The ice turns this from good, to heavenly. Trust me.
I’m sure frozen bananas would work too.

Our go-to brand is Thai Kitchen Organic Coconut Milk, because it has the most clean, pure coconut flavor of all the brands we've tried and a nice amount of fat. You can shake the can up to combine the cream and the milk, or just dump it into a pot and stirit will come together in the cooking process
