One of those”what’s in the fridge?” dinners. Leftover chicken cutlets odd sized rejects from a catering on Friday, pink oyster mushrooms and a bag of southern spinach in the crisper. I found a simple chicken mushroom bake recipe in NYTimes Cooking: “Chicken Paillard with Oyster Mushrooms” (note: do NOT use anywhere near the salt called for in the recipe. I halved the amount, and it was still a little too salty. A squeeze of lemon at the end helped) and served it over spinach, sautéed and garlic, and some of the mushrooms and garlic. Used a tandoori masala mix that I made a few months ago for seasoning. Easy-peezy-lemon- squeezy dinner.

A rainbow of colors and flavors in this meal! Recipe testing a new vindaloo recipe with chicken served over Jeera rice. Salads were a celery salad with scallions and fresh mint and yogurt dressing topped off with roasted baby beets, a French carrot salad (leftovers that worked perfectly with all the flavors on the plate), a Napali potato yogurt salad, which was something I’ve never made before and turned out absolutely delicious! Potatoes, red onion, and chilies in a yogurt base and topped off with fenugreek seed and turmeric tempered in hot mustard oil. carrot salad.

I love love love our Good Local Farmers Market! Live music! Local produce! Fresh meat from local farmers! Fun people and so many sweet doggies! If you are not there on Saturday morning you are missing out!

This fusion dinner came together beautifully. Chickpea pasta and green beans with tofu. An Indian-ish pesto of spinach, serrano, garlic and ginger. Topped off toasted pistachios. I was craving spicy and I thought it was perfect heat but Zach said I may have gone overboard with the chilis 🌶️
