Happy Friday everyone!!!!

Tomorrow is market day and we are thrilled to be bringing our first whole chickens of the season with us. These are whole, frozen chickens weighing between 5.5 and 7 lbs each!! Yes, we know they are big, but by golly if you are going to cook a chicken, you might as well cook a CHICKEN and then have several meals worth of tasty, tender meat. I cut up one yesterday and put a single (half) breast on my kitchen scale. It was 19 oz. That means that one "half" chicken breast could feed 2 people, or 1 person with leftovers.

Anyway, we'll have some birds with us tomorrow. As we have limited space at the markets, if you know you want one, you might holler, so we can put your name on it today and hold it for you. If we end up "sold out" tomorrow, fear not, we will bring more next week. We have about 50 total available on this round. Round #2 will be hitting the freezers in mid/late June.

On another note, but still chicken related, if anyone has empty egg cartons hanging around that they would like to get rid of, please consider dropping them by our booth at the Corvallis Farmers' Market or the Salem Saturday Market, we are always happy to take in egg cartons. We don't sell eggs at the markets, but we do donate a bunch and also sell a few from the farm. My stack of empty cartons is getting pretty short.

Also, we are happy to give a home to your reusable plastic grocery bags if you have any of those hanging about. Oh heck, we'll take the paper ones too, but I love those plastic ones for using in the freezers as they are much less prone to breaking with heavy and sharp edged frozen meat packages.

Alrighty!! The chickens are on ice and will be hitting the freezers tomorrow and then some more on Thursday. We always keep our birds on ice for 48 hrs so that the meat can go through its natural rigor and relaxing cycle before going in to the freezers; that way it is tender and juicy when you go to cook it.

The birds came out a wee bit larger then we were expected. I mean, we expected some 6+ lb birds, what we did not expect was that the vast majority would be 6+ lbs with a handful over 7 lbs each. I think our mild spring added to their growth rate, as normally this time of year, they are burning calories just to stay warm. This year, it was warm so they could put those calories in to growing and grow they did!! These are going to be great for being able to make several meals out of one bird.

If you want fresh, never frozen chickens so that you can cut them in to pieces and packaged them individually, you are welcome to pick them up at the farm tomorrow, Thursday or even Friday morning, depending on how many you want. Just let me know ASAP so I can get the right sized birds and keep them on ice until you get here. We do not take fresh birds to the markets as we simply do not have -the room to handle more coolers with ice in them. The meat birds are getting BIG!! Next week is their harvest week, so we will have the first group of pasture raised chickens available for purchase. We expect dressed out weights between 4.5 and 6 lbs each, though honestly that is just a guess based on how they look.

We were able to actually lower our price a bit (from last year) for this group as our feed costs went down a tiny bit. Priced at $6.95/lb

Whole birds only! If you would like to be able to cut yours up before freezing, you are welcome to come pick them up directly from the farm on Wednesday, May 6th or Thursday, May 7th; after that they go in to our freezers. If you do want to come get them fresh, please get in touch with us directly to pre-order and make an appointment for pick up.

We may have some at the markets May 9th, if we can get them fully frozen by then, but for sure they will be there the following week of May 16.

Pork Prime Rib Roasts!!!! 5 lbs each.

I just brought these home from the butcher shop yesterday. It is almost impossible to get a decent picture of these because of the packaging (they are double bagged to keep bone edges from poking a hole in the package). But trust me when I say they are a thing of beauty. Just the right amount of interior fat to give you a moist, super flavorful slice of the best tasting pork ever to grace your plate. LOL Ok I am slightly prejudiced, but that is a comment I hear often from repeat customers "best pork chop ever". This is just 5-6 pork chops all left intact to be a perfect prime rib roast. They are a bone in roast, but have had the bone cut away and then tied back on. So it cooks, presents and tastes like a bone in roast, but it slices easily like a boneless roast.

Want one, but don't have a dinner planned right away for it? These are freshly cut and well packaged, so as long as you are careful with it in your freezer (I keep them in a bag so I am not handling the package/seal ) and don't break the seal it will hold very well in your freezer.

I only have 2 of these available so if you would like one I highly suggest reserving it rather then just chancing that we will still have it at the market. Do you love deli style roast beef but have never been able to replicate it at home? This is a little beef roast that I cooked earlier this week for the exact purpose of making "lunch meat". It was spectacular, perfect and very easily done.

Some of you may be aware of the fact that I am a "gadget girl" I LOVE my kitchen gadgets and tend to try them all. Probably the most useful gadget that I have and the only one that I use several times a week is the sous vide cooker. It is basically a small water heater that will keep a pot of water a constant, low temperature for as long as you want it to. I cook with it but I also use it to defrost stuff quickly when I forget to take things out of the freezer well ahead of dinner.

Anyway, this deli style roast beef was made using an Eye of Round beef roast and the sous vide at 133.5 degrees for 22 ish hours. Yes, it takes that long to turn a beef round roast in to the perfectly tender, cooked just right, sandwich "gold" that you see in the picture. Don't have a sous vide? You can still use this little beef roast for lunch meat by cooking it to medium rare in the traditional manner. It also serves up great on the dinner plate.

Our USDA beef Eye of Round roasts are regularly priced at $15/lb. We are offering them on sale this week at 10% off which makes it just $13.50/lb . They are smaller roasts generally at 2-2.5 lb each. Safeway sells deli roast beef at $17-$18/lb!!

We will be at the Salem Saturday Market (9-2 pm) and the Corvallis Farmers' Market (9 - 1pm) this Saturday. And as always you can pick up directly from us at the farm by appointment.
