Instant Pot Shredded Beef Nachos

INGREDIENTS FOR THE CHUCK ROAST: 1 2-lb. beef chuck roast 2 tsp. dried oregano 2 tsp. brown sugar 1 1/2 kosher salt 1 tsp. chili powder 1 tsp. cumin 1 tsp. garlic powder 1 tsp. vegetable oil 1 medium yellow onion, sliced 1 (12-oz.) can Mexican beer, such as Tecate FOR THE NACHOS 1 (13-oz.) bag corn chips 3 c. Monterey Jack cheese 1 c. drained pickled jalape 1 avocado, cubed 2 radishes, sliced into rounds 1/4 c. loosely packed cilantro leaves 1/4 red onion, finely chopped Lime wedges, for serving This ingredient shopping module is created and maintained by a third party, and imported onto this page. GET INGREDIENTS Powered by Chicory DIRECTIONS In a small bowl, whisk to combine oregano, brown sugar, salt, chili powder, cumin, and garlic powder. Rub spice mix all over roast. Heat Instant Pot to Saut nd add vegetable oil. Sear all sides of chuck roast until golden, about 2 minutes per side. Remove roast. Pour beer into Instant Pot, then add chuck roast back to pot. Scatter onions over pot roast and secure Instant Pot lid. Select Pressure Cook and cook on high for 2 1/2 hours. Let pressure release naturally for 10 minutes, then quick release remaining air. Remove roast from instant pot and use two forks to shred into bite-sized pieces. Preheat oven to 375 d line a large baking sheet with aluminum foil. Spread an even layer of chips onto the baking sheet, then top with 1/3 of the cheese, jalape and shredded beef. Top with more chips, and another 1/3 of cheese, jalape񯰬 and beef. Finish with one more layer of chips and the remaining cheese, jalape and beef. Bake until cheese is melty and chips have crisped slightly, 10 minutes. Garnish with avocado, radishes, cilantro, and red onion. Serve with lime wedges on the side for squeezing

1 envelope Wish Bone Italian Dressing & Seasoning Mix 1/2 cup water 1 cup Hellmann's or Best Foods Real Mayonnaise 2 tablespoons hot chili sauce

Easy butter chicken

Ingredients 500g skinless boneless chicken thighs For the marinade 1 lemon, juiced 2 tsp ground cumin 2 tsp paprika 1-2 tsp hot chilli powder 200g natural yogurt For the curry 2 tbsp vegetable oil 1 large onion, chopped 3 garlic cloves, crushed 1 green chilli, deseeded and finely chopped (optional) thumb-sized piece ginger, grated 1 tsp garam masala 2 tsp ground fenugreek 3 tbsp tomato pur300ml chicken stock 50g flaked almonds, toasted To serve (optional) cooked basmati rice naan bread mango chutney or lime pickle fresh coriander lime wedges Method STEP 1 In a medium bowl, mix all the marinade ingredients with some seasoning. Chop the chicken into bite-sized pieces and toss with the marinade. Cover and chill in the fridge for 1 hr or overnight. STEP 2 In a large, heavy saucepan, heat the oil. Add the onion, garlic, green chilli, ginger and some seasoning. Fry on a medium heat for 10 mins or until soft. STEP 3 Add the spices with the tomato pur饬 cook for a further 2 mins until fragrant, then add the stock and marinated chicken. Cook for 15 mins, then add any remaining marinade left in the bowl. Simmer for 5 mins, then sprinkle with the toasted almonds. Serve with rice, naan bread, chutney, coriander and lime wedges, if you like.

1/2 cup cottage cheese or low-fat yogurt (I use a mix of the two)* 3 Tbsp vanilla protein powder 1/2 cup frozen blueberries 1/4 - 1/2 tsp maple extract 1/4 tsp vanilla extract 2 tsp flaxseed meal Sweetener of choice (to taste) 10-15 ice cubes 1/4 cup water Instructions Place all of your ingredients in a blender and mix until well combined. If it appears too runny, add more ice. If it's too thick, add more water. Add more sweetener or extract at the end if the flavor isn't strong enough for your taste.

INGREDIENTS 1 pound yellow or red waxy potatoes, 2 to 3 inches long (about 6 to 7 potatoes)* 2 tablespoons salted butter, melted 1/2 teaspoon garlic powder 1/2 teaspoon dried basil 1/2 teaspoon kosher salt 1/4 teaspoon black pepper 1/2 cup shredded Parmesan cheese Chopped flat-leaf parsley, as a garnish (optional)
INSTRUCTIONS Preheat the oven to 425 degrees Fahrenheit. Cut the potatoes into wedges (see the video below!). Place all ingredients into a bowl and mix until fully coated. Line a baking sheet with parchment paper. Place the wedges onto the sheet in a single layer, using your fingers to place some of the Parmesan cheese that falls off onto the top of the wedges (it doesnt have to be perfect, just take a minute or so to do this). Bake the potatoes for 18 minutes. Remove the baking sheet from the oven and flip the potatoes. Reverse the baking sheet in the oven, and bake another 10 minutes until browned and crispy. Enjoy immediately!
