“All you need is love and hot cocoa” this season. Kids will be out of the school soon for Christmas break so just to keep them entertained and excited I came up with this hot cocoa tray. I mean all these treats will excite me more than the kids😄 but just say goodbye to calories for few days and celebrate a little. Get some of their favorite treats and set it up for them so they can snack and much on it as they like. It’s the holiday season so spoil them away with candies and popcorn and all the junk they usually don’t eat everyday. Make it fun and festive!

Do you like peppermint? Peppermint reminds me of holidays and festive season and it’s my favorite. Peppermint candy, peppermint mocha, peppermint cake/cupcakes, peppermint tea, just love it all. Ok ok you all got it by now how much I love peppermint😄. Needless to say I had to make these peppermint/candy cane cupcakes. Perfect for the holidays and an ideal, personalized gift for your neighbors and friends.

By no means I am a baker but this was my first attempt at making cupcakes from scratch and they turned out to be quite decent. Also, my first attempt at piping, not so perfect but doable. I think most importantly the thought counts of baking homemade goodies and adding your personalized touch when you gift it to someone💕

If you are running out of ideas on a side dish for your Christmas dinner I have these super easy, two way Zucchini Pizza Coins for you. Pesto cheese and regular red sauce cheese coins can be paired with any dinner entrees and I promise they will disappear within no time, they are that good. It will very well fit the festive Christmas vibe with green, red, and white combo😀. My family really loves it and I am sure yours will too so give it a try.

Ingredients
10 to 15 zucchini sliced in rounds
1/3 cup chickpeas flour
1/2 cup bread crumbs
1 tbsp red crushed pepper
1 tsp red chili powder
Salt to taste
Red pasta sauce (I used Classico brand but you can use any)
Pesto (used pesto)
1/3 cup shredded cheese or any cheddar cheese
4 tbsp oil
Little water to add to chickpea flour

Method
1. In a bowl add chickpeas flour and water to make a slurry. Make sure the slurry isn’t too thin. Add salt and chili powder to it.

2. In another bowl take the bread crumbs add salt, and red crushed pepper. Dunk the zucchini circles in the chickpea slurry and than dip it in bread crumbs. Make sure it’s covered properly.

3. Add oil to the pan and shallow fry the breadcrumbed zucchinis. Once they are golden brown remove from the pan and set it aside.

4. Spread the red sauce on some and pesto on some zucchinis. Top it off with cheese and enjoy!

Do you crave for spicy food when it gets cold outside? Or am I the only weird one😄? I love eating spicy food when the temperature starts to drop so I often make this Spicy, Garlic-Chili Edamame. It’s lip smacking good and the taste stays in your mouth even after you’re done eating. Perfect to pair with your dinner entree or I just eat the whole bag by itself for dinner😄 I already have the recipe on my page but it’s so good that I am going to repost it.

Ingredients
12 oz. or 340g. Edamame (boiled)
3 tbsp soy sauce
3 tbsp grated ginger-garlic
1 tbsp crushed red pepper
1 tbsp sesame seeds
1 tbsp hot sauce
2 tbsp oil

Method
1. In a pan add oil, once it heats add ginger-garlic and let it sauté for few seconds. Add soy sauce, hot sauce, crushed red pepper, sesame seeds. Than let everything sauté for few seconds. Add the edamame pods and stir well. Enjoy!

When it comes to breakfast I always run out of ideas and often just eat a fruit or skip it many times. I want something that I can whip up quickly and also tastes good. This Hash Brown Tacos are both, super easy to make and is hands down delicious. So the next time you are running late or run out of breakfast ideas just make this and your most important meal of the day is sorted.

Ingredients:
1 cup potatoes shredded
1/3 cup bell peppers (I used orange and red, but you can use any color)
1/3 cup onions
Salt to taste
1 tsp black pepper
3 tbsp creamy spinach dip (used creamy spinach dip)
2 tortilla (I used flour you can use wheat or any kind you prefer)
2 tbsp olive oil

Method
1. In a pan add 1 tbsp olive oil, than add shredded potatoes and sprinkle salt and pepper on it. Let it cook till it’s golden brown and crispy on both sides. Keep aside

2. In the same pan add 1 tbsp oil and thrown in the onions and peppers. Let it cook till they are little brown but not too soft. Empty it in a bowl. In the same pan warm up the tortilla on both sides.

3. Take the warm tortilla and spread the creamy spinach dip and top it off with some onions and peppers. Add the cooked hash browns, again add some onions, peppers. Drizzle some spinach dip on top and enjoy!

How many of you are feeling the Monday Blues? ✋ Especially this Monday, after a long weekend break it’s so hard to get on with our routines. But as they say “the show must go on” and so must our work and eating 😄. To make your Monday blues a little better I have this really easy and flavorful recipe of Bread Baskets with Paneer filling. Just few basic ingredients from your pantry and assemble it all together in no time.

Ingredients
6 small buns (I used Hawaiian savory, butter rolls)
1 cup small diced paneer
1/2 cup onions diced
1/2 cup bell pepper diced
1 tbsp grated garlic
2 tbsp hot sauce
2 tbsp thai sweet chili sauce
2 tbsp soy sauce
2 green chillies
Salt to taste
Hot sauce to drizzle on top
Cilantro for garnish

To marinate and shallow fry the paneer
2 tbsp olive oil
1 tsp garam masala
1 tsp chili powder
1/2 tsp turmeric powder
1 and half tsp cumin-coriander powder
1 tbsp hot sauce
1/3 cup bread crumbs

Method
To marinate the paneer drizzle it with olive oil, mix all the masalas and than coat the paneer with masalas. Keep aside for 30 minutes. Than just roll it in the bread crumbs, coat it properly on all sides. Add 3 to 4 tbsp oil to a pan and shallow fry the paneer.

In a pan add 3 tbsp oil, onions, green chillies, and garlic let it sauté for few minutes. Add bell pepper and mix in hot sauce, soya sauce, thai sweet chili sauce and stir it well. Add salt as needed. Mix in the shallow fried paneer to this mixture.

Preheat the oven to 350 degrees. Take the bun and with a knife cut through on the top middle part and scoop out the bread. It should look like a small hole right in the center of the bread. With a brush coat the bread with olive oil on all sides. Put it in the oven till it’s little crusty. After taking it out of the oven add in the paneer filling, drizzle hot sauce, garnish with cilantro and enjoy!

We think so much about what we’re going to make for thanksgiving dinner and sides that we forget about drinks. This Salted Caramel Martini is so festive, and yummy that if you make it once you will keep wanting it more. So easy to make but your guest or family members will be impressed with this fancy drink. After all that food you gobble down, this dessert drink is a perfect finish to that thanksgiving dinner.

Ingredients
5 oz. salted caramel
3 oz. cold brew
1 cup ice
60 ml Rum
Chocolate bar for garnish

Method
In a blender add, salted caramel, cold brew, ice, rum and blend till it’s smooth. Serve it up in martini glasses and shred some chocolate on top. Enjoy!

This year thanksgiving might look a little different for everyone. No large gatherings, no traveling, no big parties but we can definitely have food and fun for our intimate gatherings. Make this easy Guacamole Deviled Eggs as one of your side dish which takes minimum effort but gives you maximum taste. I just made it personalized by placing the eggs in shot glasses that I bought from the dollar store. That way it’s so much easier for everyone to grab one or two or all😄

Ingredients:
4 boiled eggs
2 Avocados
3 garlic cloves
Salt to taste
1 tsp crushed red pepper
Few radish pieces for garnish (optional)
1 tbsp sesame seeds for garnish

Method
1. In a bowl smash the avocado and add salt, garlic, crushed red pepper. Mix everything well.

2. Take the boiled egg and make two equal pieces. Remove the yolk from the egg. With a spoon fill the avocado filling in the eggs. Sprinkle some sesame seeds and add the radish on top. Enjoy!

Diwali is over but who said you can’t eat colorful and flavorful food. These aloo chaat stuffed peppers are a blast of flavors in your mouth and still gives you that festive feeling all year around. You can make this as a side dish or just a quick snack when your taste buds crave something “chat pata”.

Ingredients
5 to 6 colorful bell peppers small size (cut into 2 pieces)
1 and half cup small diced potatoes
1 cup diced onion
1/3 cup diced tomato
1/3 cup chopped cilantro
3 tbsp chaat masala
1/3 cup cilantro, green chutney
1/3 cup sweet tamarind- date chutney, I used chutney
5 tbsp hot sauce
1/3 cup yogurt (add little water so it’s thinner consistency)
1/2 cup fine sev
3 tbsp oil

Method
1. Preheat oven to 375 degrees F. Coat the peppers with oil on both sides and place the sliced peppers in the oven to bake for 12 minutes.

2. Meanwhile in a pan add oil and sauté half cup onions, add diced potatoes, chaat masala. Cover the pan and let it cook till the potatoes are soft and cooked.

3. After the peppers are cooked remove it from the oven and start with adding green chutney, tamarind chutney, potato mixture, onion, tomato, hot sauce, yogurt, sev, and cilantro. Enjoy!

Wishing everyone a very happy Dhanteras! Made these Coffee Kaju Roll for this auspicious day. Hope this year brings in, good health, positivity, and happiness to each and every one of you! From today starts the five day celebration of Diwali and I just start with my favorite part of making Rangolis on the front porch and praying for everyone’s well being. Looking forward to spending these five days with my loved ones and hope you too get to enjoy with your families!

Ingredients
1 and half cups cashew blended into powder
1 and 1/3 cup graham cracker blended into powder
1/2 cup crushed coconut flakes
1 cup condensed milk
3 tsp ground coffee
2 tbsp ghee

Method
1. In the ground cashew add half cup condensed milk, mix everything together and make a dough. Apply 1 tbsp ghee to outside of the dough so it doesn’t stick. Leave aside.

2. Take the ground graham powder, add coffee and crushed coconut than mix everything well. Add half cup condensed milk, than make a dough. Apply 1 tbsp ghee to the outside of the dough so it doesn’t stick.

3. Take parchment paper and start spreading cashew dough out with your fingers. Than take the rolling pin and spread it out evenly. Keep the rolled cashew dough aside and now do the same with graham cracker dough. Try to roll both the doughs evenly and same size.

4. Now keep rolled graham cracker dough over cashew dough and start folding both the doughs gently. Fold all the way it will look like a long cylinder shape. Cover with parchment paper and leave it in the fridge for couple of hours. Than take a knife and make circular pieces. Enjoy!

When I think about Diwali it brings a big smile on my face as it’s one of my favorite festivals and love everything about it. Of course food is the best part but love the lights, decoration, dressing up, firecrackers, pooja, and the list goes on and on. This year we all will be celebrating a different kind of Diwali but still let’s just take a break from all the chaos and try to enjoy these Diwali days with your loved ones and pray for a better 2021.

I made this Akhrot or Walnut Barfi with just few ingredients and it doesn’t require any elaborate preparation. Few simple ingredients that might already be in your pantry and your Diwali mithai is ready.

Ingredients
4 cups walnut finely crushed
1 cup sugar
1/3 cup milk
1/2 tsp nutmeg powder
1/2 tsp cardamom powder
10 to 12 kesar strands dissolved in few drops of milk
1 tbsp ghee

Method
1. In a non stick pan add sugar and than add milk. Once the sugar is dissolved and starts to boil a little add crushed walnut.

2. Mix in the nutmeg powder, cardamom powder, kesar dissolved in milk and before you turn off the stove add ghee. After turning off the stove empty the mixture in a square pan and let it cool. Refrigerate for couple of hours and Enjoy!

Just taking a little pause from all the Diwali preparations and thinking more of easy fix dinner ideas and when I think about quick fixes this CHINESE BHEL recipe comes right to my mind. You just need some onions, bell peppers, cabbage, throw in some sauces together and boom you are half way done for dinner prep. Mix in the veggies with the store bought fried, crispy chow mein noodles and dinner is sorted. We Indians love our bhel and when we mix in veggies and sauces or chutneys with anything crispy it turns into a bhel for us 😄so this is my mom’s recipe for Chinese bhel. Hope you love it as much as we do❤️

Ingredients
1/2 cup sliced onions
2 cups sliced bell peppers (I used assorted colors, you can use any)
1/2 cup sliced cabbage
3 tbsp soy sauce
1 tsp vinegar
1/3 cup sweet red chili sauce
3 tbsp sriracha hot chili sauce
1/4 cup sweet chilli sauce
2 cup crispy, fried chow mein noodles (store bought)
3 tbsp oil
Few green onions for garnish

Method:
1. In a wok or non stick pan add oil, add onions, bell peppers together and let it cook for couple of minutes.

2. Now add in the cabbage. Cabbage cooks very quickly so immediately add soy sauce, vinegar, sweet red chili sauce, sriracha hot chili sauce, maggi sweet chili sauce. Let it cook for a minute and turn the stove off. You don’t want the veggies to over cook it has to be little crunchy.

3. Take the crispy chow mein noodles and mix it in the cooked veggies. Stir and mix all the ingredients together and garnish with green onions. Enjoy!
