I use to just let my cinnamon rolls rest and rise on the counter. However, my apartment seems to always be cold so it would take double, almost triple the time per rise.
Then I started using the oven. I turn on the light and close the door prior to making the dough. Make sure your oven is OFF! You want to do this about 30 minutes prior to making your dough so it’s nice and warm when it’s time for the first rise. [ I believe some bakers just turn on the oven to the lowest temperature and once it pre-heats, they turn it off and open the door.] But I like this way better 😋 I let my dough rise once, roll, fill, and cut. Then, it’ll go back in the over to proof a second time. I definitely love this method and how big and fluffy my cinnamon rolls turn out.
