Traditional Chicken Salad (no grapes)

⅔ cup mayonnaise, best quality such as
Hellmann’s or Duke’s
¼ cup sour cream
1½ tablespoons fresh lemon juice (from 1 lemon)
1½ teaspoons Dijon mustard
½ teaspoon salt
½ teaspoon freshly ground black pepper
4½ cups cooked shredded chicken breast, finely chopped (from 2 breasts of rotisserie chicken)
3 scallions, light and dark green parts, thinly sliced
2 ribs celery, finely diced
3 tablespoons fresh chopped dill
3 tablespoons fresh chopped Italian parsley
Lemon pepper, optional

Place the shredded chicken in a large bowl.

In a food processor, blend mayo, sour cream, lemon juice, Dijon mustard, salt and pepper.

Add finely chopped scallions and celery, dill, parsley and lemon pepper.

Mix all ingredients together in a large bowl.

NOTE:
If you like really finely chopped chicken salad, you can run the chicken through the food processor by itself for a few spins.

Then lightly run the scallions and celery through a food processor. And mix them all together.

This is my go-to cold Italian pasta salad when the weather is warm. It’s the perfect side, snack, or meal. I make a double batch every time we go the lake and the kids (and adults) never go hungry. Enjoy!

Kid Friendly Cold Pasta Salad

Ingredients:
Bowtie pasta
1 package Ham, cubed
1/2 pound Salami, shredded, chopped or cubed
1 package Mozzarella, mini balls
1 carton Grape Tomatoes, quartered
1 can Black olives, sliced and drained
1/2 a stalk of Green onions, chopped
1 container Parmesan cheese, shredded

Dressing:
1 lemon, juice
1/4 cup red wine vinegar
1 cup olive oil
1-2 tablespoon Italian seasoning
1/2-1 tablespoon Dijon mustard
Pinch of salt and pepper

Cook the bowtie pasta in boiling water following box instructions. Let pasta cool and put in fridge.

Mix ingredients in a large bowl, cubed Ham, chopped salami, mozzarella mini balls, tomatoes, black olives, chopped green onions, shredded parmesan cheese.
Make dressing in a separate bowl and stir rapidly until it’s mixed. Pour dressing on other ingredients in large bowl and mix. Add cold pasta and mix all together. Add extra seasoning, salt and pepper to taste.

Love this easy bean salad, it’s perfect for a crowd! It’s a great side dish or a dip with chips.

🫘Texas Caviar🌽
2 cans black beans
2 cans of corn
1 can of black eyed peas
1 cup of cherry tomatoes, quartered
1 bunch cilantro, finely chopped
3/4 bottle of Newmans Family Recipe dressing
1 cup feta or cojita cheese

Rinse all beans with water, add tomatoes, add cilantro, add dressing. Last add cheese as a topping.

Tip: Let the ingredients sit together overnight, add cheese before serving. Eat as a side salad or with chips as a dip.

HAMBURGER HELPER BEEF STROGANOFF
(recipe by The Defined Dish)

Ingredients
2 tbsp extra virgin olive oil
1 cup yellow onion, finely diced
1lb ground beef, 85% lean
1 cup mushrooms, sliced thin
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp paprika
1 tsp kosher salt
1/2 tsp black pepper
2 tsp dijon mustard
4 cups wide egg noodles, uncooked
4 cups beef broth
2 tbsp white wine vinegar
8 oz light sour cream
2-3 springs of fresh thyme, leaves only for serving

Instructions
Heat a large skillet over medium-high heat with olive oil.

Add the onions and cook, stirring, for 2 to 3 minutes.

Add the ground beef. Brown the beef, garlic powder, onion powder, paprika, salt and pepper. Cook, breaking up the meat with the back of a spoon, until no longer pink, 5 to 7 minutes.

[If you feel like there is too much excess fat, drain off but reserve about 2 tablespoons of the fat to saute the mushrooms in.]

Add the dijon mustard and mushrooms and cook, stirring, until well-combined and when the mushrooms have soaked up some of the excess fat and are softened, 3 to 4 minutes.

Then, add the uncooked wide egg noodles, beef broth and white wine vinegar. Bring to a boil and cook, stirring often, until noodles are tender and liquid has been absorbed, about 12 minutes. (NOTE: I like to cook the noodles separately then mix together when I serve the dish.)

Remove skillet from heat and stir in the sour cream. Taste and add more salt, if desired.

Garnish with thyme, serve and enjoy!

🍰OOEY GOOEY BUTTER CAKE
(From Paula Dean)

Ingredients
Cake:
1 18 1/4-ounce package yellow cake mix
1 egg
8 tablespoons butter, melted

Filling:
1 8-ounce package cream cheese, softened
2 eggs
1 teaspoon vanilla
8 tablespoons butter, melted
1 16-ounce box powdered sugar

Directions
Preheat oven to 350 degrees F.
Combine the cake mix, egg, and butter and mix well with an electric mixer. Pat the mixture into the bottom of a lightly greased 13 by 9-inch baking pan.

In a large bowl, beat the cream cheese until smooth. Add the eggs, vanilla, and butter and beat together.

Next, add the powdered sugar and mix well. Spread over cake batter and bake for 40 to 50 minutes. Make sure not to over bake as the center should be a little gooey.

This is the perfect dessert - a combination of healthy and not-healthy 😝. Not only does it look pretty, but it’s easy to make and delicious. I served it at a football watching party and it was a hit! Both the kids and adults loved it.

🍓FRUIT TART DESSERT

2 packages of Pillsbury pastry or pizza dough
Strawberries, sliced thin
Blueberries
Raspberries
Kiwi, sliced thin (cut off the skin)
8 oz package of Cream cheese, softened
1/2 cup Powder sugar
1 teaspoon Vanilla
Agave syrup

Let the Pilsbury crust thaw on the counter for 20 minutes. Blend the cream cheese in a mixer until soft, then add powder sugar slowly while mixing, then add vanilla. Mix for a few more minutes until it’s spreadable. Taste it and see if it needs more cream cheese or sugar, it just depends on your taste.

Roll the crust onto a cookie tray overlapping itself for thickness. Sprinkle the dough with some powder sugar, just a light dusting. Bake dough, use the instructions on the box.

After dough is lightly brown, remove from oven and let cool a few minutes. Spread the cream cheese/sugar mixture on top. Then add fruit on top of cream cheese layer. Last, drizzle fruit with agave syrup (remember a little goes a long way) ENJOY!!!

🏈These are the perfect snack for football watching parties! They are easy, good for a crowd, and so yummy.

HAM AND CHEESE SLIDERS

INGREDIENTS
4 tablespoons (1/2 stick) unsalted butter
1 tablespoon Dijon mustard
1 teaspoon Worcestershire sauce
1/2 teaspoon onion powder
1/4 teaspoon kosher salt
1 (12-ounce) package Hawaiian sweet rolls, such as King’s
12 slices Swiss cheese (about 7 ounces), divided
12 thin slices deli ham (about 10 ounces)
1 teaspoon poppy seeds

INSTRUCTIONS
Heat the oven to 350°F.
Place 4 tablespoons unsalted butter in a small, microwave-safe bowl and microwave until melted, 20 to 30 seconds. (Alternatively, melt butter in a small saucepan over medium heat.) Add 1 tablespoon Dijon mustard, 1 teaspoon Worcestershire sauce, 1/2 teaspoon onion powder, and 1/4 teaspoon kosher salt, and whisk to combine. Set aside.

Without separating the rolls, cut 1 package Hawaiian sweet dinner rolls in half horizontally with a serrated knife.

Place the bottom half of the rolls in a 9x13-inch or 7x11-inch baking dish.

Arrange 6 slices of the Swiss cheese on the rolls, overlapping the slices as needed to completely cover. Fold and arrange 12 thin slices ham over the cheese, arranging a slice on each roll. Layer the remaining 6 slices Swiss cheese over the ham. Place the top half of the rolls over the cheese.

Brush the butter mixture onto the top of the rolls, then sprinkle with 1 teaspoon poppy seeds. Cover the baking dish tightly with aluminum foil.

Bake until the sandwich is heated through and the cheese melts, about 10-20 minutes. Uncover and bake until the rolls are lightly browned, 5 to 8 minutes.

Transfer the slab to a cutting board, then cut into individual sliders with a serrated knife before serving.

🍔CHEESEBURGER SLIDERS🍔

INGREDIENTS
12 Hawaiian Rolls (1 package of Kings Hawaiian Rolls)
1 pound ground beef (or 2 lbs for thicker burgers)
2 Tbsp worcestershire sauce
1/4 cup ketchup
1 egg
1 teaspoon seasoned salt
½ teaspoon black pepper
6 slices american cheese

Butter Topping:
½ teaspoon garlic salt
2 tablespoons butter

Preheat your oven to 375°.
Using parchment paper, unroll enough paper to make it the size of the tray that the rolls come in. Cut the parchment paper to the size of the tray of rolls. Set the tray of rolls aside and place raw ground beef on parchment paper and flatten to the size of the parchment paper. (Tip: Ground beef can “shrink” when cooking so if desired, you can spread/flatten it out a little over the edges to help it fit the buns, even if it shrinks!)

NOTE: You’re using the parchment paper as a guide to know what size to flatten the ground beef to so it can fit nicely on the rolls after cooking.

Place ground beef in a bowl and add 1 egg plus worcestershire sauce and ketchup and season with salt and pepper.

Now place parchment paper and ground beef rectangle in to rimmed baking sheet or cake pan. Bake at 375° for 15-17 minutes or until juices run clear on the top.

Garlic Butter Topping:
In small microwavable dish, melt butter and then add in garlic salt. Stir to combine, and set aside.

Using a bread knife, and keeping the sides
of the 12 rolls connected… cut the rolls in half, long ways, creating a giant top layer and bottom bun layer.

Burger Assembly:
Once the ground beef has finished baking remove the pan from oven. Carefully, with a large spatula, pick up beef and tilt to drain excess grease back in to the pan. Then place the meat on the bottom layer of rolls.

Remove the parchment paper and throw paper away.

Place 6 slices of cheese on top of ground beef. Then, place the top bun layer on top of the cheese.

Using a basting brush, brush the top of the buns with the garlic butter you have prepared.

Wrap the assembled sliders in one big foil, bake 375° oven, for 3-4 minutes.

🍕Crescent Pizza Rolls🍕

Ingredients
2 packages Pillsbury crescent rolls
8 mozzarella cheese sticks cut in 1/2 creating 16 pieces
1 package pepperoni slices
1 teaspoon garlic powder
1 teaspoon oregano
1 teaspoon basil
1 egg
2 tablespoons freshly grated Parmesan cheese
Pizza sauce or marinara sauce for dipping

Instructions
1. Preheat oven to 375 degrees
2. Combine garlic powder, oregano, and basil in a small bowl.
3. Beat the egg in a small bowl.
4. Remove crescent rolls from the package. Starting with the wide end, place a mozzarella stick on the end, and place pepperonis along the surface of the crescent roll. Starting with the widest end, roll into the most narrow end. Place on an ungreased cookie sheet. Sprinkle with seasoning and brush with beaten egg.
5. Bake for 15 minutes or until golden brown. Sprinkle with Parmesan cheese. Serve with warm pizza sauce or marinara sauce.
